  • Folate content in strawberries - Effects of storage, ripeness and cultivar

    • Strawberries are a good dietary source of folate and are of interest because of their importance as raw material for the Swedish food industry. The aim of this study was to quantify the total folate content in strawberries, after different conditions of storage, at different grades of ripeness and in different cultivars, using a strictly controlled RPBA-kit, optimised for food analysis. In the study fresh strawberries were stored imitating commercial conditions no losses of folate could be observed. Regarding ripeness, the highest folate concentration was found in unripe strawberries, which differed significantly from ripe and overripe. A significant variation (p<0.01) was found for six different cultivars. All results are given for both fresh and dry matter in order to exclude interference from possible variations in water content.

    • Data on the overall dietary folate intakes among high-risk groups in poor countries is very limited. Vegetables are considered good sources but the evaluation of their contribution is hampered by the lack of data on folate concentrations in many traditional foods. Data on the analysis of folate concentrations in 16 wild vegetables used in the Mekong Delta and the Central Highlands in Vietnam and an evaluation of the relative importance of different foods in folate intakes of women is presented. Vegetable samples were collected in four study villages, blanched and frozen samples were transported to Sweden for analysis. Freeze-dried samples were analysed for total folate quantification using a commercial radio protein binding assay. Daily folate intakes among women were estimated from 7-day food frequency interviews with 213 women. The folate concentration in the vegetable samples ranged from 10 to 96 microg/100 g. The mean estimated daily folate intake among the 213 women in the study areas was 251 microg. Vegetables contributed approximately one-third of the daily folate intake, of which 72% and 42%, respectively, in the two regions was from wild vegetables. A majority of the women (87%) got some dietary folate from wild vegetables and nearly one-third had mean daily folate intakes of > 50 microg from such hidden food sources. The evaluation of dietary folate is complicated by data gaps in food composition tables, the unreliability of existing food data, variations between methods used for folate analysis and limited understanding of the bioavailability of food folate.

    • The aim of this thesis is to study Computer Art in Sweden from 1966 to 1986. The first Swedish artists who used computers in their work appeared during this period and the art arena was technically transposed into something new and infrequently scrutinised. The origins of Swedish Computer Art came from various avant-garde groups and individuals, some of them encouraged and influenced by associated artists' experiences abroad. In the late sixties and early seventies Sweden was at the forefront of art development in new media.The initial part of the study approaches some of the more general issues - how the development of graphical user-interface design moves along with the aesthetics that appear in the context of the art forum. The problems are dealt with in an overview of Swedish artists: Beck & Jung, Lars-Gunnar Bodin, Wolfgang Huebner, Sven Hoglund(Sven Inge de Moner),Ann-Charlotte Johannesson, Sture Johannesson,Jan W Morthenson,Torsten Ridell and Ture Sjolander. Some of the most important technicians are presented, and some of them created Computer Art themselves, for instance Göran Sundqvist.From different viewpoints an outline of Swedish Computer Art history is presented combined with a discussion of the similarities between the art arena during this period and the digital revolution that followed. The art arena was to become linked not only to exhibition halls, art galleries or museums; artists of new media could just as well be presented in other forums, e.g. design work, the consulting computer sector of commerce,television, or video. The analysis includes a discussion of art structure, contents, dematerialization and cultural resonance. In relation to these notions, terms and theories of visuality and communication are discussed.
