  • Restaurant practices : time, planning, knowledge and dreams
  • 2017
  • Ingår i: Scandinavian Journal of Hospitality and Tourism. - : Taylor & Francis. - 1502-2250 .- 1502-2269. ; 17:3, s. 297-311
  • Tidskriftsartikel (refereegranskat)abstract
    • This paper contributes to research on restaurant work, which plays an important role in culinary arts research. The aim of this study was to make visible and elucidate the daily work practices in eight small restaurants in a seasonal tourist destination on the Southeast coast of Sweden. The central methods used were observations and participant observations and interviews, along with an e-mail questionnaire and examination of published information concerning all the restaurants. By means of practice theory, three central elements were used to identify and understand the configuration of the activities involved in daily work in small seasonal restaurants. These three elements, knowledge/competence, technologies/materiality and creation of meaning, formed four practices. The practices identified in this study were managing time and seasons; planning, strategising and controlling; knowing and having skills; and dreams and lifestyle. The conclusion of the study indicates that small restaurant practices may be conflicting, as they involve an extremely time-consuming workload, vague planning and lingering knowledge growth in contrast to the ideas of creativity and development that are a part of the restaurant owners’ dreams and lifestyle.

  • Rescaling public transport planning in Sweden : investigating the continued planning at the scale ‘left behind’
  • 2024
  • Ingår i: European Planning Studies. - : Taylor & Francis. - 0965-4313 .- 1469-5944. ; 32:7, s. 1445-1463
  • Tidskriftsartikel (refereegranskat)abstract
    • This paper aims to contribute to a qualitative understanding of rescaling and its impact on planning strategies and governance relations across scales. By investigating the effects of rescaling for the old scale ‘left behind’ – through the case of public transport planning in Sweden – this paper illustrates how rescaled tasks continue to engage the scale ‘left behind’ (and is a source of ‘tensions’), long after a rescaling process has taken place. Through the lens of rescaling, three main points of discussion are highlighted in the paper: Firstly, processes of rescaling are intertwined with policy layering, and can as such be a source of both ‘good and evil’ for the continued planning on the scale ‘left behind’. Secondly, this calls for an increased geographical sensitivity in research when investigating the effects of rescaling, as the formal and practical outcomes of rescaling can be spatially unequal for planning bodies with similar formal mandates on the same scale. Thirdly, the development of governance relations and ‘tensions’ between new and old scales, are by no means static in time nor space, and calls for increased dialogue across planning scales to aid in the transition of responsibilities from the old to the new scale.

  • ‘Power’ is that which remains to be explained: Dispelling the ominous dark matter of critical planning studies
  • 2017
  • Ingår i: Planning Theory. - London : SAGE Publications. - 1473-0952 .- 1741-3052. ; 16:2, s. 203-222
  • Tidskriftsartikel (refereegranskat)abstract
    • The purpose of this article is to contribute to the development of new theoretical and methodological resources for analysing power dynamics in planning studies. Our overarching aim is to demystify the concept of ‘power’ and what it purports to be describing, making those practices grouped under this label more tangible and, hence, also more readily contestable. Investigating how the effects we label as power are produced, instead of using ‘power’ as an all-covering explanation of societal events, demands a conceptualization of power as the outcome of social processes rather than as a causal variable behind them. An empirical study of a referendum regarding a major urban development in a Swedish suburban municipality illustrates how strong assumptions regarding the dominance of, for example, pre-existing powerful actor-constellations or purely economic relations are not always very helpful, highlighting the need for more acute attentiveness to the micro-physics of power.

  • Rättvist resande? Villkor, utmaningar och visioner för samhällsplaneringen
  • 2023

  • Sommeliers' Food and Beverage Combinations : Social Conventions and Professional Identity
  • 2019
  • Ingår i: Journal of Gastronomy and Tourism. - : Cognizant Communication Corporation. - 2169-2971 .- 2169-298X. ; 4:1, s. 29-39
  • Tidskriftsartikel (refereegranskat)abstract
    • Research on food and beverage combinations has mainly concentrated on sensory evaluation of product characteristics or customer preferences, and there is limited research on professional prac-tices related to food and beverage combinations. In this study, in-depth focus group interviews were conducted with 21 Swedish sommeliers with different work experiences. The aim was to explore how professional sommeliers perform food and beverage combinations as a social practice. The qualitative content analysis resulted in two categories: conventions of combining and the sommelier identity. It was shown that performing food and beverage combinations was a routinized activity surrounded by rules, competence, and materiality and was driven by the will to satisfy guests and benefit emotionally and economically. It was also described as being a part of shaping sommeliers’ professional identities through a continuous striving for improved competence. These findings con-tribute to the literature on food and beverage combinations, bridging the gap between objective taste and individual subjectivity, have practical relevance for the hospitality industry, since they indicate norms of behavior and individual driving forces in one of its professions. This also helps educators in the industry to challenge traditional ways of teaching combinations in culinary arts. Moreover, as identity works as a driver for sommeliers in their professional development, this also presents ideas about how to improve staff retention in the restaurant business by building professional identities.

  • Women's Artistic Gymnastics: An (auto-)Ethnographic Journey
  • 2011
  • Bok (övrigt vetenskapligt/konstnärligt)abstract
    • Breathtaking circus-like performances and perfectly shaped bodies: The current ideal of women’s artistic gymnastics is narrow. Competitive success is only possible if gymnasts satisfy distinct bodily characteristics and produce particular gymnastics performances. How do present-day female gymnasts experience this sport? This book provides insight into gymnastics by demonstrating how a group of young high-performance gymnasts ‘live’ their sport.

  • Tinnitus and hearing loss in 15-16-year-old students : mental health symptoms, substance use, and exposure in school
  • 2008
  • Ingår i: International Journal of Audiology. - : Informa UK Limited. - 1499-2027 .- 1708-8186. ; 47:11, s. 688-694
  • Tidskriftsartikel (refereegranskat)abstract
    • The current study assessed the responses from a survey titled ”Life and Health – Young People 2005”, completed by 2.878 15-16 year-old adolescents in mainstream schools in the county of Örebro, Sweden. Thirty-nine percent of students with hearing loss (slight, mild, or moderate) and 6% of students with normal hearing reported tinnitus often or always during the past three months. Almost no gender difference was observed among students with normal hearing reporting tinnitus (boys 6.3%, girls 5.6%); however, a gender difference was noticed among hard-of-hearing (HH) students (boys 50%, girls 28%). Adolescents with both hearing loss and tinnitus reported considerably higher scores for mental symptoms, substance use, and school problems than other students. Anxiety in the past three months, male gender, and alcohol consumption in the past year were associated with tinnitus in HH students; irritation and anxiety in the past three months, disability, use of illicit drugs, and truancy predicted tinnitus in the normal hearing group. Consequently, students with a hearing loss and tinnitus are at high risk and should be monitored for subsequent problems.
