  • Emerging microbiota during cold storage and temperature abuse of ready-to-eat salad​

    • Introduction: Ready-to-eat (RTE) leafy vegetables have a natural leaf microbiota that changes during different processing and handling steps from farm to fork. The objectives of this study were (i) to compare the microbiota of RTE baby spinach and mixed-ingredient salad before and after seven days of storage at 8°C or 15°C; (ii) to explore associations between bacterial communities and the foodborne pathogens Listeria monocytogenes, pathogenic Yersinia enterocolitica, and pathogen model organism Escherichia coli O157:H7 gfp+ when experimentally inoculated into the salads before storage; and (iii) to investigate if bacterial pathogens may be detected in the 16S rRNA amplicon dataset. Material and methods: The microbiota was studied by means of Illumina 16S rRNA amplicon sequencing. Subsets of samples were inoculated with low numbers (50-100 CFU g(-1)) of E. coli O157:H7 gfp+, pathogenic Y. enterocolitica or L. monocytogenes before storage. Results and discussion: The composition of bacterial communities changed during storage of RTE baby spinach and mixed-ingredient salad, with Pseudomonadales as the most abundant order across all samples. Although pathogens were present at high viable counts in some samples, they were only detected in the community-wide dataset in samples where they represented approximately 10% of total viable counts. Positive correlations were identified between viable counts of inoculated strains and the abundance of Lactobacillales, Enterobacteriales, and Bacillales, pointing to positive interactions or similar environmental driver variables that may make it feasible to use such bacterial lineages as indicators of microbial health hazards in leafy vegetables. The data from this study contribute to a better understanding of the bacteria present in RTE salads and may help when developing new types of biocontrol agents.

  • Meat inspection of reindeer - a rich source of data for monitoring food safety and animal and environmental health in Sweden

    • Background: ​This study scrutinized carcass conditions recorded in post mortem inspections (PMI) of reindeer (Rangifer tarandus tarandus, L.) during 2015–2016 because of the importance for monitoring food safety and animal and environmental health threats.Material and methods: PMI results were retrieved from the National Food Agency. A negative binomial regression model was applied. For actual parameters, incident risk rate (IRR) with confidence intervals was calculated.Results and discussion: The number of conditions found in PMI varied widely between years and batches. The most common conditions (43 and 57% of all reindeer slaughtered in 2015 and 2016, respectively) derived from non-zoonotic parasites as the most abundant one, Hypoderma tarandi. Setaria sp. as well as both inflammatory processes and trauma were found in low prevalences. Further investigation of interactions with slaughterhouse size and inspector experience is needed. The conditions found rarely indicated food safety hazards and no epizooties or zoonoses have been recorded in the past two decades. Visual PMI with complementary sampling for specific hazards in slaughterhouses could thus be a helpful tool for monitoring the health and welfare of the reindeer population, the food safety risks with reindeer meat, and the status of the environment.

  • Non-compliances - an indicator of food control effectiveness.

    • Introduction: This paper presents an option for evaluating food control effectiveness by analysing the frequency of non-compliances (FnC). Material and methods: A food business establishment can have several different types of control areas (i.e. pest control, HACCP), that can be inspected to assess its compliance with regulations in the food sector. From April 2012 to April 2014, 10 736 inspections were performed in Sweden, covering all 15 types of control areas. In these inspections, 2223 non-compliances were found, giving a FnC of 0.21 per control area inspected. Outlying types of control areas, inspection teams and establishments were selected for supervision of the internal audit procedure. Results and discussion: The key and surprising finding was that types of control area, teams and establishments with high FnC had a higher ratio of false negative non-compliances than those with low FnC. Moreover, false negative non-compliances were more common than false positive non-compliances. Possible explanations include the complexity of legislation affecting food businesses and the complexities of the food business. Conclusions: The risk of non-compliance going undetected is greatest where many non-compliances have already been detected. These results should inform future food control strategies.

  • Biosafety considerations and risk reduction strategy for a new veterinary faculty building and teaching hospital in Sweden

    • Introduction: This paper describes a hazard- and risk-based strategy and recommendations on relevant biosafety levels in facility design of a new veterinary faculty building including a veterinary medical teaching hospital. Both animal and human health were considered.Materials and methods: Agents listed in the regulatory frameworks on animal and human health were identified as the main potential hazards. Suggestions on biosafety level and facility design were based on the official risk grouping of those agents, the associated risk management procedures, and biosafety experiences from previous faculty buildings.Results and Discussion: It was suggested that VHC should not be designed for work with agents requiring facilities at biosafety levels 3 and 4, and that actions in cases of accidental exposure to notifiable infections should follow the regulatory requirements. Facilities requiring biosafety level 2 were identified from risk scenarios and transmission routes. Experiences from the first five years of operation revealed good prevention of spread of infection from patients in isolation facilities and successful elimination of Salmonella and MRSA from the large animal clinic.Conclusion: In order to avoid costly construction mistakes, an overall biosafety strategy should be formulated and used as guidance for architects and other relevant stakeholders designing facilities for the animal health sector. Regulatory requirements on infectious diseases must be complied with.
