  • To use a recipe - not a piece of cake. Students with mild intellectual disabilities' use of recipes in home economics.
  • 2014
  • Ingår i: International Journal of Consumer Studies. - : Wiley. - 1470-6423 .- 1470-6431. ; 38, s. 412-418
  • Tidskriftsartikel (refereegranskat)abstract
    • Recipes are not only part of today's cooking culture, they are also part of the Swedish syllabus of home economics. The aim of this study was to investigate what kinds of difficulties students with mild intellectual disabilities have using recipes during cooking lessons in home economics. We conducted an ethnographically inspired approach, with a total of 44h of accompanying observations. Three compulsory schools for students with intellectual disabilities were enrolled in the study, and 37 students and three teachers were included. The socio-cultural theory of learning has been used as a theoretical framework. The findings reveal both that recipes are central artefacts during the cooking lessons and that the students have various difficulties using the recipes. The difficulties vary, and they concern both how the recipes are designed and the purport of the recipes. Difficulties in relation to the design included, for example, the separation of ingredients and instructions in the text and the large amount of information given in both the whole and the parts of the recipes. The difficulties in relation to the purport – that is, the meaning or sense of the recipe – were the ingredients, the kitchen utensils and the knowledge of how to perform a specific task. These difficulties can be considered special in relation to the use of the recipes. We suggest the concept of ‘recipe literacy’ to capture the complex knowledge of using recipes.

  • Sympathizing with the Radical Right : Effects of Mainstream Party Recognition and Control of Prejudice
  • 2022
  • Ingår i: The Journal of Social and Political Psychology. - : Leibniz Institute for Psychology (ZPID). - 2195-3325. ; 10:1, s. 141-157
  • Tidskriftsartikel (refereegranskat)abstract
    • The electoral success of radical right parties throughout Western Europe is the biggest change to these formerly stable party systems. Several studies have identified that mainstream parties can shape the trajectory of radical right parties. Our aim is to contribute to this literature, and to investigate if and how radical right parties gain from mainstream party recognition. Theoretically, we draw on the literature that has suggested that when aiming to explain the legitimization of radical right parties, we need to consider that many individuals in Western Europe are influenced by an anti-prejudice norm when forming preferences towards such parties. We hypothesize that when mainstream parties signal that it is acceptable to associate with radical right parties’ they challenge the anti-prejudice norm that dissuade voters from such parties. In addition, individuals with lower internal motivation to control prejudice (IMCP) are more susceptible to be affected by mainstream party recognition of radical right parties as those with high IMCP have a stronger internalized anti-prejudice norm. We evaluate the effects of changes in the normative context in a survey experiment (N = 1133) by manipulating mainstream party legitimization of a radical right party, the Sweden Democrats, before the Swedish parliamentary election in 2018. Our results suggest that when mainstream parties challenge the anti-prejudice norm, individuals are more likely to sympathize with radical right parties. Moreover, the effect of mainstream party recognition is moderated by IMCP – individuals with a low motivation to appear non-prejudiced are more influenced by mainstream party legitimization of a radical right party.

  • To double a recipe : interdisciplinary teaching and learning of mathematical content knowledge in a home economics setting
  • 2014
  • Ingår i: Education Inquiry. - : Routledge. - 2000-4508. ; 5:2, s. 301-318
  • Tidskriftsartikel (refereegranskat)abstract
    • This study examines if interdisciplinary teaching can be said to facilitate the learning and use of fractions by Swedish 12-year-old pupils. Home and Consumer Studies is well suited to interdisciplinary teaching, and young people can therefore find it interesting to study maths since the setting is relevant to them. Building on variation theory and a learning study, we examined pupils' (n18) ability to double fractions greater than ½ when using a recipe. The general results show that what is to be learned benefits if it is presented in different ways, that teachers should not take pupils' knowledge for granted, and mathematically that it is not necessary to divide something to be able to double it. We argue that the study shows that genuine problems based on pupils' interest and life world can enhance motivation and, in turn, learning.

  • The Global, Regional, National, Sectoral, Economic, and Commercial Impact of the Russo-Ukrainian War and the Emerging Second Cold War
  • 2022
  • Ingår i: Journal of Applied Economics and Business Research. - Canada : JOURNAL APPLIED ECONOMICS & BUSINESS RESEARCH. - 1927-033X. ; 12:2, s. 58-70
  • Tidskriftsartikel (övrigt vetenskapligt/konstnärligt)abstract
    • This paper suggests that the ongoing Russo-Ukrainian war and existing rivalries among future global leaders, such as the USA vs. China, NATO vs. Russia, and China vs. India, may result in a second Cold War. A new global order and the emerging second Cold War will have many impacts on global, regional, national, and political economies and sectors, as well as commercial and business activities. This paper elaborates on the new(de)globalization, diminishing national and regional economic powers, and environmental challenges. Nations will develop new industrial policies and try to secure global supply chains and material flow. At the same time, itis expected that investment in defense, energy, and food sectors will increase to shore up national and regional security. Tourism and other travel-based sectors, such as sports events, might degrow. These wars might deinternationalize the activities of corporations who would need to develop new business processes, organizational forms, and technological capabilities to protect their existing markets and businesses. Based on these arguments and discussions, the paper calls for studies to examine new research ideas and suggest empirical research to expand our understanding and support the informed decision-making of policymakers and managers.

  • The role of place in city centre retailing
  • 2021
  • Ingår i: Place Branding and Public Diplomacy. - : Springer Science and Business Media LLC. - 1751-8040 .- 1751-8059. ; 17:1, s. 36-49
  • Tidskriftsartikel (refereegranskat)abstract
    • City centre offerings, including shopping, restaurants and cafés, and a lively atmosphere are vital place attributes, which together with several other elements create an attractive place. However, city centre retailing is facing serious competition from e-commerce and external shopping malls, and dying city centres appear to have become a worldwide epidemic in the last decade. To retain visitors in the city centre is a prioritized issue and a current topic, for both retail and place branding research. In the present study the role of different elements of city centre retailing in the promotion of a city as a retail destination is explored by analysing photos published on Instagram by a Town Centre Management initiative. The following research question is answered: What role can the place play in city centre retailing? The study is inter-disciplinary, showing how retail attributes and place elements can reinforce each other and together offer opportunities for unique customer experience in a city centre, for the benefit of both retailing and the city brand. Three dominant visual themes of the place’s role in the marketing of a city centre are identified: the place as a frame, the place as a living room, and the place as a stage.

  • Tid att följa upp : Digital tidmätning i svensk hemtjänst
  • 2023

  • Who needs 3D when the Universe is flat?
  • 2014
  • Ingår i: Science Education. - : Wiley. - 0036-8326 .- 1098-237X. ; 98:3, s. 412-442
  • Tidskriftsartikel (refereegranskat)abstract
    • An overlooked feature in astronomy education is the need for students to learn to extrapolate three-dimensionality and the challenges that this may involve. Discerning critical features in the night sky that are embedded in dimensionality is a long-term learning process. Several articles have addressed the usefulness of three-dimensional (3D) simulations in astronomy education, but they have neither addressed what students discern nor the nature of that discernment. A Web-based questionnaire was designed using links to video clips drawn from a simulation video of travel through our galaxy and beyond. The questionnaire was completed by 137 participants from nine countries across a broad span of astronomy education. The descriptions provided by the participants were analyzed using hermeneutics in combination with a constant comparative approach to formulate six categories of discernment in relation to multidimensionality. These results are used to make the case that the ability to extrapolate three-dimensionality calls for the creation of meaningful motion parallax experiences.

  • A Structural Equation Model Demonstrating the Relationship between Food Safety Background, Knowledge, Attitudes and Behaviour among Swedish Students
  • 2022
  • Ingår i: Foods. - : MDPI. - 2304-8158. ; 11:11
  • Tidskriftsartikel (refereegranskat)abstract
    • Traditionally, food safety knowledge has been seen as a factor in improving food safety behaviour. However, the relationship between knowledge and behavior is complex. The aim of the present study was to investigate self-reported data from 408 university students regarding food safety background, knowledge, attitudes, and behaviour using Structural Equation Model (SEM) to examine the influence of different factors on food safety behaviour. The SEM was applied to four factors derived from the data: Background, Knowledge, Attitude and Behaviour. The novelty of this current investigation is the inclusion of the Background factor (genus; experience of cooking and handling different food items; experience of a food safety education course; the foremost sources of food safety knowledge). The factors were constructed from variables with sufficient factor loadings and set up in a predetermined structure confirmed to be valid in previous studies. The results, demonstrated as regression coefficients between factors, confirm that the Background factor strongly influenced Knowledge (0.842). The Knowledge factor, in turn, strongly affected Attitude (0.605), while it did not directly affect Behaviour (0.301) in the same way as Attitude. Attitude had a stronger influence on Behaviour (0.438) than Knowledge. Thus, the Attitude factor seemed to play a mediating role between Knowledge and Behaviour. This indicates that students ' attitudes towards the importance of food safety may have an impact on their food safety behavior, which should have implications for the development of food safety education. This warrants further investigation and practical development.

  • Kommunernas framtid
  • 2019

  • Knowing how to use and understand recipes: What arithmetical understanding is needed when students with mild intellectual disabilities use recipes in practical cooking lessons in Home Economics?
  • 2017
  • Ingår i: International Journal of Consumer Studies. - : Wiley. - 1470-6423 .- 1470-6431. ; 41:5, s. 494-500
  • Tidskriftsartikel (refereegranskat)abstract
    • The aim of this study was to explore what arithmetical understanding is needed when students with mild intellectual disabilities use recipes during practical cooking lessons in Home Economics. The settings were compulsory schools in Sweden attended by students with intellectual disabilities. Sixteen lessons in Home Economics during which cooking took place were observed. In total, 37 students and three teachers participated. All students had a mild intellectual disability. Their ages varied, but most were between 13 and 14 years old. The sociocultural perspective on learning, combined with a literacy framework, was used as a theoretical foundation for the study. Main findings are that students need an arithmetical understanding of (i) how to interpret numbers, (ii) how to interpret and use units, and (iii) how to compute when using recipes. The knowledge and skills needed to be able to use a recipe are featured in the concept recipe literacy, capturing both theoretical, declarative knowledge and the more practical, procedural knowledge. Recipe literacy can be used to theorize the use of recipes when learning to cook, as in Home Economics.
