    • A barley-soaking process was studied to find conditions that inactivate the prooxidative enzyme lipoxygenase and the lipolytic enzyme lipase but preserve phytase activity to develop possible procedures for production of barley products with potentially high mineral bioavailability and good oxidative stability. Lactic acid concentration, temperature, and soaking time were studied. The study was done using a multivariate experimental design. Lactic acid concentration varied between 0 and 1%, temperature varied between 45 and 70°C, and soaking time varied between 30 and 120 min. Although conditions under which lipoxygenase was inactivated were found, total inactivation of lipase was not obtained. Total lipoxygenase inactivation with <20% remaining lipase activity and >60% remaining phytase activity was reached after soaking in 1% lactic acid at suitable time-temperature combinations of 70-110 min and 53-58°C.

  • Omförhandling med staden : en miljöpsykologisk studie av parkourutövning

    • I den här studien används parkourutövning för att undersöka hur ett lekfullt samspel med omgivningen påverkar relationen mellan människa och stad. Det samspel med stadsmiljön som parkourutövning innebär ligger till grund för en omförhandling med staden som har betydelse för hur stadsmiljön används av personen. En växande förståelse för hur stadsmiljön kan användas ackompanjeras av positiva känslor och upplevelser i förhållande till staden. Genom studier med observationer och intervjuer beskrivs parkourutövningens lekfulla sätt att involvera stadsmiljön samt de känslor och upplevelser som hör därtill. Vidare diskuteras hur detta samspel påverkar relationen mellan traceur och stad. Det föreslås att lekfull rörelse i stadsmiljö har potential att främja en fysiskt aktiv livsstil, känslan av trygghet i stadsmiljö och ge möjlighet till mental återhämtning. I rapportens sista del reflekteras det kring hur kunskap om människans lekfulla kroppsliga rörelse i stadsmiljön kan införlivas i planeringen.

  • A spectral and Bayesian approach for analysis of fluctuations and synchrony in ecological datasets

    • Autocorrelation within ecological time series and synchrony between them may provide insight into the main drivers of observed dynamics. We here present methods that analyse autocorrelation and synchrony in ecological datasets using a spectral approach combined with Bayesian inference. To exemplify, we implement the method on dendrochronological data of the pedunculate oak (Quercus robur). The data consist of 110 years of growth of 10 live trees and seven trees that died during a synchronized oak death in Sweden in c. 2002-2007. We find that the highest posterior density is found for a noise colour of tree growth of gamma approximate to 0.95 (i.e. pink noise) with little difference between trees, suggesting climatic variation as a driving factor. This is further supported by the presence of synchrony, which we estimate based on phase-shift analysis. We conclude that the synchrony is time-scale dependent with higher synchrony at larger time-scales. We further show that there is no difference between the growth patterns of the alive and dead tree groups. This suggests that the trees were driven by the same factors prior to the synchronized death. We argue that this method is a promising approach for linking theoretical models with empirical data.

    • Comprehensive but interpretable assessment of the environmental performance of diets involves choosing a set of appropriate indicators. Current knowledge and data gaps on the origin of dietary foodstuffs restrict use of indicators relying on site-specific information.This Personal View summarises commonly used indicators for assessing the environmental performance of diets, briefly outlines their benefits and drawbacks, and provides recommendations on indicator choices for actors across multiple fields involved in activities that include the environmental assessment of diets.We then provide recommendations on indicator choices for actors across multiple fields involved in activities that use environmental assessments, such as health and nutrition experts, policy makers, decision makers, and private-sector and public-sector sustainability officers. We recommend that environmental assessment of diets should include indicators for at least the five following areas: climate change, biosphere integrity, blue water consumption, novel entities, and impacts on natural resources (especially wild fish stocks), to capture important environmental trade-offs.If more indicators can be handled in the assessment, indicators to capture impacts related to land use quantity and quality and green water consumption should be used. For ambitious assessments, indicators related to biogeochemical flows, stratospheric ozone depletion, and energy use can be added.
