  • Sommeliers' Food and Beverage Combinations : Social Conventions and Professional Identity

    • Research on food and beverage combinations has mainly concentrated on sensory evaluation of product characteristics or customer preferences, and there is limited research on professional prac-tices related to food and beverage combinations. In this study, in-depth focus group interviews were conducted with 21 Swedish sommeliers with different work experiences. The aim was to explore how professional sommeliers perform food and beverage combinations as a social practice. The qualitative content analysis resulted in two categories: conventions of combining and the sommelier identity. It was shown that performing food and beverage combinations was a routinized activity surrounded by rules, competence, and materiality and was driven by the will to satisfy guests and benefit emotionally and economically. It was also described as being a part of shaping sommeliers’ professional identities through a continuous striving for improved competence. These findings con-tribute to the literature on food and beverage combinations, bridging the gap between objective taste and individual subjectivity, have practical relevance for the hospitality industry, since they indicate norms of behavior and individual driving forces in one of its professions. This also helps educators in the industry to challenge traditional ways of teaching combinations in culinary arts. Moreover, as identity works as a driver for sommeliers in their professional development, this also presents ideas about how to improve staff retention in the restaurant business by building professional identities.

    • Over recent decades criminological research has changed from a gender-blind discipline which equated crime with men and thus ignored questions about gender, to an approach that studied gender by showing statistical differences between men and women, and then finally to a more inclusive and elaborate gender-theoretical approach to crime and crime control. However, despite this development, research on gender - and in particular research on gendered norms and the construction and enactment of masculinities - within the criminological field has been unable to keep up with developments in gender research. Since 1990, only a few anthologies with a gender-theoretical orientation focusing on masculinities within the criminological research field have been published. Many of the theoretical developments in gender research still have difficulties in reaching into mainstream criminology, partly because such developments are often published in feminist and/or gender theoretical journals. This volume both problematizes and renders visible conceptions and norms regarding male behaviour and masculinities and shows how these affect the criminological field through providing a theoretically sound and clear gender perspective to this field of research. With sections based around the following three themes: negotiations of masculinity in institutional settings, vulnerable masculinities and risk-taking and masculinities, this volume will be of interest to scholars of criminology, sociology, social work and gender studies, as well as policy-makers, and law enforcement professionals.

    • There is lively discussion in the social sciences about minority groups and their claims for social justice. Universalism versus difference and redistribution versus recognition are two important issues of debate. This paper takes a closer look at the social justice claims articulated by the Swedish disability movement. It discusses how questions of representation, collective identity, and needs interpretations are dealt with in a number of disability associations. One important assumption guiding our study is that the interpretations of members' needs, how their needs can best be met, and who is to have the legitimate right to communicate their needs, are questions subject to constant debate. The aim is to demonstrate some of the complexities confronting the disability movement in its struggle for social justice. To be more specific, we set out to show two things: (i) how different kinds of justice claims are balanced by the investigated organizations; and (ii) that the demands for cultural recognition and socioeconomic redistribution are raised not only by the disability movement vis-à-vis the state, but also by groups within the disability movement vis-à-vis other groups in the movement.

    • In this paper we explore the research literature relating to the guardianship of unaccompanied minors seeking asylum. In particular, we seek to find out what type of dilemmas have been identified by research concerning the guardianship of unaccompanied minors, and the focus that the literature has therefore taken. A comprehensive search of identified databases was conducted. Ultimately, 38 publications were selected for analysis. The review was qualitative and inductive. The results of the review suggest that research has identified and focused on challenges in the form of diverging policy such as gaps and inconsistencies in guardianship institutions, as well as challenges in balancing different objectives concerning the guardianship role, such as conflicting interest in the guardianship assignment or between different actors involved in protecting the child’s interest.The conclusion is that different configurations of guardianship institutions, as well as the identified challenges for practice, appear to be related to the welfare state model. Therefore, future research concerning guardianship for unaccompanied minors needs to move beyond legal sources and policy documents by focusing on empirically informed research on the relationship between child care/protection, principles of assessing the best interest of the child and the welfare state systems.

    • Based on conversation analysis, this study investigates central practices in what is defined as a caring interview, in the context of welfare administration. Caring refers to (1) a helpful interviewing in reformulations of questions, taking interviewees' difficulties to answer into consideration; (2) a caring attitude in the framing of questions, showing understanding of clients' circumstances and (3) professional's enactment of expertise in assessments of clients' disabilities and care needs. Data include a corpus of 43 recorded interviews in which officials at the Swedish Social Insurance Agency interview clients who have applied for benefits. The study adds to research on interactional sensitivity, polar questions and epistemic stance in institutional interaction. The study shows how the interviewer prioritizes confirming polar questions, takes responsibilities of knowing into account and reduces the epistemic gap to the interviewee in practices of a caring interview. This makes the interviewing markedly different from standardized and bureaucratic interviewing.
