  • To use a recipe - not a piece of cake. Students with mild intellectual disabilities' use of recipes in home economics.

    • Recipes are not only part of today's cooking culture, they are also part of the Swedish syllabus of home economics. The aim of this study was to investigate what kinds of difficulties students with mild intellectual disabilities have using recipes during cooking lessons in home economics. We conducted an ethnographically inspired approach, with a total of 44h of accompanying observations. Three compulsory schools for students with intellectual disabilities were enrolled in the study, and 37 students and three teachers were included. The socio-cultural theory of learning has been used as a theoretical framework. The findings reveal both that recipes are central artefacts during the cooking lessons and that the students have various difficulties using the recipes. The difficulties vary, and they concern both how the recipes are designed and the purport of the recipes. Difficulties in relation to the design included, for example, the separation of ingredients and instructions in the text and the large amount of information given in both the whole and the parts of the recipes. The difficulties in relation to the purport – that is, the meaning or sense of the recipe – were the ingredients, the kitchen utensils and the knowledge of how to perform a specific task. These difficulties can be considered special in relation to the use of the recipes. We suggest the concept of ‘recipe literacy’ to capture the complex knowledge of using recipes.

    • This paper develops and explores the “Ergo-Brand” proposition; which posits that consumersmay prefer to buy goods that are made under good working conditions (GWC). This preferencewould enhance a differentiation strategy for companies, thereby fostering the application ofergonomics in production. This proposition is developed in the context of a narrative review ofthe literature on ‘ethical consumerism’. This is supplemented with a small pilot survey study,conducted in both Canada and Sweden (n=141) to explore this proposition. Results indicate thatconsumers would prefer goods made under GWC, but not unconditionally as quality and priceconcerns were ranked higher. Access to information on the working conditions in productionwas seen as a barrier. Nevertheless, the Ergo-Brand concept may be a viable avenue topromoting attention to ergonomics in companies – particularly if consumer habits are subject tointervention by advertising. Further research on this strategy is warranted.

    • Gender, Quality and Career at the University of Possibilities. This essay introduces the Young Academy of Sweden, established by the Royal Swedish Academy of Sciences in 2011, and highlights three challenges in the current national academic system: gender inequality, the external funding bodies' focus on "excellence" (environments and individuals), and lack of a trasparent tenure track system. In order to attract the most promising young researchers, both men and women, and to create better opportunities for new groundbreaking research in a long-term perspective, the Young Acadmey of Sweden has proposed a tenure track model (funded primarely by block grants), which is also presented in the essay.

    • This chapter adopts a public policy perspective to tourism workforce formation in Finland, Norway and Sweden. The qualitative content analysis of national tourism strategy, planning and policy documents reveals that aspired labour regimes are predominantly characterised by mobility, flexibility and segmentation. While these practices ensure a competitive operational environment, satisfy seasonal employee demand and provide means for states to integrate immigrants into the labour market, negative societal consequences including precariousness, low-quality employment and inequality arise as well. Although all examined documents advocate sustainable production and consumption for Nordic tourism, workforce is essentially not included in sustainability discourses and initiatives.

  • Celebrating 30 years louder than hell : exploring commercial and social 'Host Event Zone' developments of the heavy metal festival Wacken Open Air

    • Although respective research has proliferated, little attention has been given to the processual nature of festivals. By drawing upon the concept of host event zones, we examine how different spectators perceive the development of the heavy metal festival Wacken Open Air (WOA) with respect to the dynamics between the festival as a temporary place in which visitors enjoy spectacle and ritual, a commercial site and the everyday living space of local inhabitants. WOA has grown in 30 years from an initiative by a few friends for devoted metal fans into an internationally renowned music mega-event. WOA represents a consumption mediated 'peaceful utopia' where festivalgoers find social meaningfulness in neo-tribes. However, the accelerating mainstream appeal of Wacken Open Air for a non-metal fan audience, which significantly spurt by the media, challenges both regular attendees' experience of this idealized space and the relationship between the host community and the festival.
