  • Are food advertisements promoting more unhealthy foods and beverages over time? : evidence from three Swedish food magazines, 1995-2014
  • 2017
  • Ingår i: Ecology of Food and Nutrition. - 0367-0244 .- 1543-5237. ; 56:1, s. 45-61
  • Tidskriftsartikel (refereegranskat)abstract
    • Unhealthy food in advertising has been suggested as a mediator for the increase in diet-related illness. This study quantitatively investigates changes in food advertising between 1995 and 2014 in terms of food categories promoted, macronutrient content, and percentage of foods classified as heathy or unhealthy from a sample of 7,199 ads from three Swedish food magazines. With the exception of increased alcoholic beverage and decreased carbohydrate-rich-food promotion, no monotonic trends of increasingly unhealthy food advertisement are found. From these findings, it is argued that food magazine advertising is not a mediator of the adverse dietary trend.

  • The role of food selection in Swedish Home Economics : the educational visions and cultural meaning
  • 2014
  • Ingår i: Ecology of Food and Nutrition. - : Informa UK Limited. - 0367-0244 .- 1543-5237. ; 53:5, s. 484-502
  • Tidskriftsartikel (refereegranskat)abstract
    • This article explores foods talked about and chosen in the education of Swedish Home Economics as a relationship between structural processes and agency. Three data sets from observations and focus group interviews with teachers and students were analyzed for food classifications. These were related to a culinary triangle of contradictions, showing factors of identity, convenience and responsibility. Results show that foods talked about and chosen by teachers and students were reflections of dominant cultural values. Results also indicate that teachers had more agency than students, but that the choices they made were framed by educational visions and cultural values.

  • The influence of fodder on vitamin A and ?-carotene in milk - Sahelian mali
  • 1999
  • Ingår i: Ecology of Food and Nutrition. - 0367-0244 .- 1543-5237. ; 38:2, s. 145-164
  • Tidskriftsartikel (refereegranskat)abstract
    • Vitamin A deficiency has been reported on repeatedly in recent years from the Sahel region in West Africa. Nomadism, pastoralism and agro-pastoralism are the common systems for food production in the area. Milk was a major food item prior to the repeated droughts of the past few decades. This investigation has looked at the retinol content in milk from various domestic animals at the end of the dry season, which is critical from vitamin A supply point of view. Milk from cows fed on hay from the previous year was devoid of retinol, while milk from goats contained good levels regardless of whether the source of fodder was browse or fresh grass after the onset of rains. Acacia tortilis, a common and preferred fodder tree, is rich in ?-carotene. Establishing small-scale cultivation of other ?-carotene rich, indigenous, woody, non-spiny fodder-species such as Maerua crassifolia, is therefore proposed to increase the vitamin A content, and therefore the value of cow's milk. This could be integrated into the ongoing tree-plantation programs for dune stabilisation.

  • Effect of nutrition education and psychosocial factors on child feeding practices: findings of a field experiment with biofortified foods and different women categories
  • 2018
  • Ingår i: Ecology of Food and Nutrition. - : Informa UK Limited. - 0367-0244 .- 1543-5237. ; 57, s. 346-371
  • Tidskriftsartikel (refereegranskat)abstract
    • Despite the efforts to promote good practices in infant and young child feeding (IYCF), the adoption of such practices has been low. Using data from a sample of 665 women, and the theory of planned behavior, we examine the effect of different types of nutrition education and psychosocial factors on the use of recommended IYCF practices. Regression results show that nutrition education and psychosocial factors have strong positive effect on the extent to which IYCF practices are used, with the latter having conflicting individual but overall positive effect. Moreover, coefficients of latter were mostly less than those of the former indicating that pschosocial factors were less important in explaining variability in usage of IYCF than the nutrition education variables. It further finds that different sets of nutrition education and psychosocial factors affect different categories of women, with interactive nutrition education approaches having a greater effect. The findings also suggest need for targeting of beneficiaries with multiple nutrition education approaches.
