  • An analysis model of tourism academic networks : a Swedish case study triangulated with an EU research project

    • The purpose of this research is to investigate and develop an analysis model of a tourism department network using an explorative approach. Strategic stakeholders have been identified for the tourism department and organised into partner groups. An analysis model has been developed based on four network types: formal organisation, informal organisation, formal individual and informal individual. For every type, the following six network content dimensions were found relevant to analyse: stakeholders, reciprocal relations, relation exchange, network driving forces, network management and network purpose. The investigations have shown some focused network strengths such as network permanency, with corresponding weaknesses such as rigid relations. Some typical implications of the strengths and weaknesses for the department have been identified, and some network techniques to handle the implications have been proposed. An annual network development process for a tourism department is suggested. The resulting network is summarised as the Professional Tourism Academic Network (PTAN).

    • Values are important in education and their role in university studies is central in tourism teaching as well. How values are communicated to students is an important aspect of our axiological approach. In order to promote a fruitful approach to values in the students, this conceptual paper discusses the role of theoretical knowledge in achieving empowerment for the students based on the tenets of critical realism and on Gramsci’s philosophy. As students acquire disciplinary theoretical knowledge, they also develop the tools to make ethical evaluations. Knowledge is meant as the best possible understanding that we have of the world at the moment and it is always possible to achieve a better explanation of a phenomenon. Through an approach based on theoretical knowledge integrated with other creative ways to teach, the students can develop an ethical sensitivity and a flexible set of skills for both the workplace and academia.

    • Conferences are funny events. They are self-evident elements of our lives as academics: meetings that occur, often annually; take place in various locations; and involve (hopefully) like-minded people, aiming to share their latest research findings. Conferences are actually so selfevident that very little research exists analysing what takes place at conferences, why people attend them in the first place, and essentially what the conference does to delegates as participants. This article is, on one hand, a reflective report from an academic conference: TEFI 9 —Celebrating the Disruptive Power of Caring in Tourism Education. But it is also simultaneously an analysis of the implicit and explicit rationale and return on investment for attending academic conferences, in the words of three, at that time, PhD candidate rapporteurs and one professor rapporteur, who acts as this article's narrator.

    • Tourism education has matured from vocational to more liberal education while current trends underline the importance of critical studies and the shift of curricula to more action-oriented forms of education and citizenship education. However, a gap can be noticed between theory and practice in the development of pedagogy for sustainable tourism. The research reported here draws from debates in tourism education, education for sustainability, critical studies, and education for citizenship to develop a conceptual framework for pedagogy for sustainable tourism. This framework is used to reflect on the curriculum space of a master programme in tourism in Sweden in an analytic autoethnographic approach. The analysis indicates that the master programme addresses several aspects of the reflective vocational and reflective liberal curriculum space. It would also benefit from the integration of more experiential, action-oriented learning to strengthen the communal understanding of civil action and education for citizenship. This research contributes to the conceptualisation of the curriculum space for sustainable tourism. Such efforts are considered especially important in acknowledging the complex, dynamic character of tourism higher education. The aim is to invite a dialogue about the reform and evolution of tourism education to meet the needs for a sustainable future.

    • Tourism as a field of study in tertiary education has maturedsignificantly during the past few decades (Airey & Tribe, 2005).Academic program coordinators and administrators have becomeincreasingly cognizant of the complex issues inherent in contemporary tourism studies. As a result, they no longer need to take the initial step of familiarizing themselves with the breadthof the tourism field in developing appropriate tourism curricula,as highlighted by Gunn (1998). Nonetheless, the various models of academic curricula established during the years suggest that the full academic scope of tourism has yet to be fully circumscribed to give due recognition to its multidisciplinary origin and its multifarious concomitant issues. Doctoral research projects and working theses are increasingly adopting interdisciplinary,multidisciplinary, and transdisciplinary perspectives to the studyof tourism, and are highlighting the benefit of integrating the foundational meta-theories of these “mother disciplines” in bothundergraduate and postgraduate tourism programs. This conceptual article reflects on the peculiar position of tourism as anacademic subject in tertiary education and relies on the criticaldiscussion of tourism educational perspectives from both the literature and practice in tourism academia to finally suggest the integration of meta-theories of major disciplines in tourism programs.

    • Storytelling is a powerful way of exploring the past, crafting values in the present, and imagining the future. Stories, told from different perspectives and drawing from diverse experiences, can build shared understandings, empathy and care. Everyday stories of tourism - coping, success, empowerment, nurturing, disruption, relationship building and activism - are important tools that help students, teachers, researchers, practitioners and community members reflect and learn. The stories that we tell join the streams of wider narratives, shaping our understanding of the world and the ways in which we encounter it, thus providing a worldmaking function. Engaging in storytelling is anything but a benign activity as different narratives are continuously constituting and naturalizing the world and our relations with others. Tourism scholar Keith Hollinshead (2004) describes worldmaking as collaborative processes that essentialize and normalize peoples, places and practices. Hence, the notion of worldmaking calls for critical reflection on the ways in which stories enact, reinforce and alter power relationships by erasing alternative stories and by giving to voices in the margins. For us as tourism educators, storytelling unlock doors, opens new spaces for multiple ways of knowing and being, and moves towards more sustainable, hopeful, caring and ethical worldmaking in tourism.

    • Though tourism research has become more value-laden in its scholarship and pedagogy, there is still a risk that tourism higher educationcurricula (re)produce uncritical views of society and sustainability.I argue that research methodology courses and assignments basedon data collection can legitimize the use of sustainable tourism solutions based in generalizations and abstractions, rather than encouragethe dialogue and reflectivity needed for major change in times of crisis.They also risk promoting a self-serving agenda where researchers (re)produce their success in the knowledge economy. In light of thelimitations of the sustainability concept in time of planetary crisis,I look into the possibilities of a tourism research pedagogy in theAnthropocene by uncovering arguments for plurality and deliberationin knowledge production. Social scientists need to address questionsof ethics in times of crisis. Conjointly, the Anthropocene highlights ourplanetary attachment, where human responsibility and social actionare imminent.

  • Wonderment in tourism land : three tales of innovation

    • The paper uses an unconventional story format to report on three cases of tourism innovation, using the literary genre of nonsense to also contemplate narrative expression in academic research. Case materials principally derive from open in-depth interviews. The analysis highlights the importance of knowledge in innovation, also illuminating an important relationship to entrepreneurial passion. Notably, passionate interest inspires a learning habit that builds enabling stocks of knowledge; these knowledge stocks render the necessary technical knowledge and situational awareness to see and seize innovation opportunity. By using their vast stock of knowledge, entrepreneurs can identify needed resources and know-how and ways to fill in the gaps. In prosaic terms, this ingrained learning habit depicts a story of incremental innovation at personal scale. Use of the literary nonsense genre overtly positions narrative as a rhetorical form, inviting contemplation of alternative forms of scholarly expression. In this respect, novel forms of expression opens the way to new insight into social phenomena. Polyvocality enhances our knowledge of the social world.

  • "We are service people, and we stay until the job is done" : enactments of professionalism in restaurants

    • In response to calls for increased professionalism in the restaurant industry, this paper aims to show how it is constituted in the daily practices in the industry, and to clarify ideas of professionalism held by the practitioners in the industry. Micro practices of daily activities performed by restaurant practitioners were identified in 13 small restaurants: 8 in a tourist destination and 5 in cities. The sayings and doings in kitchens and dining rooms noted in transcripts of interviews and observations were sorted with an insider's interpretation. The findings were then analysed by means of components of practice theory: knowledge and learning, communication, corporeality, and time use. Among the restaurant practitioners, professionalism is conceived to be a combination of craftsmanship, a customer orientation involving observant management, and loyal perseverance. This conceptualisation is important to understand in discussions about how hospitality and culinary arts education can develop.
