  • Foodwork among people with intellectual disabilities and dietary implications depending on staff involvement
  • 2012
  • Ingår i: Scandinavian Journal of Disability Research. - London : Taylor & Francis. - 1501-7419 .- 1745-3011. ; 14:1, s. 40-55
  • Tidskriftsartikel (refereegranskat)abstract
    • The food provision for people with intellectual disability (ID) in Sweden is organized within their own households. The aim of this study was to describe how foodwork – planning for meals, shopping for food and cooking – is performed in different social contexts in community settings involving people with ID, staff or both. Dietary intake in the main meals in relation to foodwork practice was also studied. Four different foodwork practices could be distinguished. For some participants only one kind of foodwork practice was found, but for most of them two or more different practices. There was a tendency that food items and dishes chosen and used differed depending on what foodwork practice was performed, which, in turn, affected the nutrient intake. More attention needs to be directed to these everyday matters as a means to increase the quality of support in food for people with ID.

  • Social Significance of Older Peoples Meals : Balancing Adaptive Strategies Between Ideals and Structure
  • 2017. - 2
  • Ingår i: Food for the Aging Population. - Oxford : Woodhead Publishing Limited. - 9780081003480 ; , s. 83-98
  • Bokkapitel (övrigt vetenskapligt/konstnärligt)abstract
    • Meals in everyday life, including selection of food, commensality, and culinary rules are important for people’s identity. The complexity of meals is multifaceted and includes several dimensions. Growing old and being dependent may alter an individual’s food habits, which could affect the social significance of meals in everyday life. To manage food provision in old age and the well-known problems related to this scope of organization policymaking is a common approach. However, applying policies in reality is difficult and can cause dilemmas in everyday life, which is referred to as the policy–practice gap. Adaptive strategies must be used to manage this gap and thereby to reach food security, which is a human right.

  • Distinctions and boundaries : Men's talk about food celebrities
  • 2019
  • Ingår i: British Food Journal. - 0007-070X .- 1758-4108. ; 121:2, s. 520-532
  • Tidskriftsartikel (refereegranskat)abstract
    • PurposeThe purpose of this paper is to explore how a group of men relate to food celebrities in the contemporary Swedish food-media landscape, especially celebrity chefs on TV.Design/methodology/approachSemi-structured interviews with 31 men in Sweden (22-88 years of age), with different backgrounds and with a variety of interest in food.FindingsThe paper demonstrates different ways in which the men relate to food celebrities. The men produce cultural distinctions of taste and symbolic boundaries, primarily related to gender and age, but also class. Through this, a specific position of ‘just right’ emerged. This position is about aversion to excess, such as exaggerated gendered performances or pretentious forms of cooking. One individual plays a particularly central role in the stories: actor and celebrity chef Per Morberg. He comes across as a complex cultural figure: a symbol of slobbish and tasteless cooking and a symbol of excess. At the same time, he is mentioned as the sole example of the exact opposite – as a celebrity chef who represents authenticity.Practical implicationsScholars and policy makers must be careful of assuming culinary or social influence on consumers from food celebrities simply based on their media representations. As shown here and in similar studies, people relate to them and interpret their performances in a variety of ways.Originality/valueThis is one of the few studies that target the role of food celebrities in contemporary Western consumer culture from the point of view of the consumers rather than analyses of media representations.

  • Understanding the ideology of the Swedish tax-paid school meal
  • 2019
  • Ingår i: Health Education Journal. - : SAGE Publications. - 0017-8969 .- 1748-8176. ; 78:4, s. 388-398
  • Tidskriftsartikel (refereegranskat)abstract
    • Background: Children are provided with food at school in various ways. In Sweden, free school lunches are provided to all children of compulsory school age. Internationally, Sweden is fairly unique in this sense, which makes the country an important example to study and reflect upon. Objective: This article aims to describe the welfare ideology that underpins the provision of school meals in Sweden.Setting: Schools in Sweden.Method: The ideological underpinnings of the free school lunches provided in Sweden are described using the Seven Elements of Public Meals framework, which comprises the elements of welfare, health, sustainability, learning, social environment, physical environment and food. Results: Our findings suggest that school meal provision in Sweden is seen as a universal welfare service and a part of public health work. Meals are to be sustainable and are regarded as a learning occasion. The importance of the social and physical environment is accentuated, and when it comes to the quality of the food served, the school meal has improved over the years. Conclusion: The choice of food in schools is increasingly expected to be guided by personal choice. However, the privilege of being served a shared free school meal comes at the cost of less individual choice.
