  • Sustainable Home Economics Teacher Education in Pandemic Times : Experiences from Swedish Universities

    • One aspect of the Sustainable Development Goals is quality education. Not only should education work in favor of sustainable development on a global level; quality education needs to be sustainable in the sense that it provides opportunities for students’ learning in relation to the subject taught. The school subject Home Economics (HE) is often described as having cooking as a core feature. Consequently, HE-teacher education commonly includes practical cooking as a central part of the content. During the outbreak of the Covid-19 pandemic, educational preconditions suddenly changed, and possibilities for undertaking cooking on campus became limited. In this study, we investigate HE-teacher educators’ experiences of adjusting practical cooking activities during the covid-19 pandemic. The aim is twofold: first, to highlight how the pandemic situation has been tackled in Swedish HE-teacher education. Second, to contribute to the understanding of practical cooking as a part of sustainable HE-teacher education.In Sweden, there are four universities that offer HE-teacher education. Educators from these four universities were interviewed digitally in focus groups in two rounds. The first round was held in October 2020, the second in April/May 2021. The interviews followed a semi-structured design, and questions were asked about what the pandemic had meant for practical cooking activities in terms of problems, solutions and insights for the future. The interviews are analyzed using thematic analysis, and preliminary results show e.g. how educators used digital solutions, making the education accessible despite new restrictions. These solutions did not necessarily affect students’ possibilities to achieve formally stated learning goals, but there was a hesitation concerning whether tacit and situated aspects of learning was lost when physical encounters did not take place. In short, the results evoke new insights regarding what constitutes sustainable education for HE-teachers of today.

    • Home economics (HE) is a practice-oriented school subject which expects students' active involvement and where students deal with topics strongly intertwined with everyday life themes. Although, with the digital era within the last decades, new challenges have arised - e.g. how to implement digital technology into subject teaching in a pedagogically meaningful way? Moreover, the COVID-19 lock-down showed that in many countries especially home economics teachers faced new challenges when trying to give independent learning tasks for students at home. It was difficult to instruct as well as to evaluate students' food preparation skills from a distance, and learning skills related to sensory evaluation was practically impossible. In this article, we share the experiences of a joint Erasmus+ strategic collaboration project NAVI-HED (Navigating through digital challenges in Home economics education) that united university researchers and expert practitioners, working as HE subject teachers, from four Nordic-Baltic countries. As an innovation, expert practitioners from each partner country (n=12) were included through the Delphi technique for mapping good practices and ideas that worked well during the lockdown period. The expert teachers were included into the project in four rounds composing the methodology in this project: (1) describing their practices; (2) voting for the most promising practices; (3) developing the ideas further with the researchers, making them more detailed and versatile; (4) evaluating the final material. The product of this project is a booklet of pedagogical ideas from practitioner to practitioner, that supports students’ independent learning in HE distance education. Including the expert practitioners in several rounds of the development enabled to raise the quality and workability of the material. However, there were also challenges between different parties: e.g. having different expectations for the details of the content or the form of presenting the final material. We hereby open the viewpoints of both parties on the methodology and cooperation process as well as share our experiences in using Delphi technique for empowering the process and the project results through know-how of the expert practitioners.

Vad innebär det för lärarutbildare att bedriva undervisning i praktiska moment under en pandemi?I det här projektet samlades lärarutbildare från Göteborg universitet, Högskolan Kristianstad, Umeå universitet samt Uppsala universitet i fokusgrupper i två omgångar för att berätta vad pandemin inneburit för undervisningen i praktisk matlagning, vilka lösningar som har framkommit och vilka lärdomar man tar med sig in i framtiden. En första intervjuomgång genomfördes i oktober 2020 och uppföljningsintervjuer gjordes under april och maj 2021.Preliminära resultat visade att den praktiska matlagningen inte bara handlade om matlagningsmetoder utan allt det som händer “runt omkring”.   • Adolescents’ trust in food messages and their sources

Purpose: The authors used role-playing with subsequent focus group interviews in order to explore how adolescents negotiate conflicting food messages they encounter in their everyday lives. The purpose of this paper is to describe adolescents’ perceptions about different messages and their sources and to explore the trust they place in such sources. Design/methodology/approach: In total, 31 adolescents aged 15-16 years participated in role-playing with subsequent focus group interviews. A qualitative content analysis was used to analyse the data. Findings: The adolescents depicted an everyday life with multiple and different messages about food and eating. In addition, they stated that these messages were conveyed by a wide range of sources at different levels, for example, by parents, teachers, sports coaches and media. The messages from different sources were conflicting and covered many different perspectives on food and eating. When negotiating food choices in the role-playing and in the focus group discussing how to handle different and conflicting messages, trust became visible. The trustworthiness of messages and trust in their sources were associated with several important aspects in regard to whether or not the messages were based on knowledge about food and nutrition, care for the person receiving the messages, and/or commercial interest. In addition, the results indicate that the situation and the social relationship to the person providing the message were of importance for trustworthiness. Originality/value: This study is novel as it uses role-playing as a research method and describes the trust adolescents place on food messages and their sources. To understand the factors that enhance such trust is important for the development and provision of education, information, and other health-promotion activities related to food in order to support and strengthen adolescents’ critical reflections on food messages from different sources.

    • © 2018, Emerald Publishing Limited. Purpose: The purpose of this paper is to explore and elucidate adolescents’ reasoning about risks related to food and eating. Design/methodology/approach: Boys and girls aged 15-16 years participated in a focus group interview with role-playing as a stimulus for discussion and reflection. In all, 31 participants took part, divided into five groups. In the role-playing, the participants portrayed agents who they perceived to give messages about food. In the focus group they discussed their experience of carrying out the role-play, and how they usually cope with conflicting messages, preferences and needs regarding food and eating. Findings: The findings suggested that there were two main themes of risk profiling related to eating. One concerned bodily risk related to the food ingested and included concerns both about not reaching health and performance due to the unfavourable intake of calories, nutrients, additives, bacteria, viruses and parasites, and threats to immediate well-being following consumption. The second main category concerned the risk of being conspicuous, or “sticking out”, which incorporated food-based gender norms and norms related to table manners. In practice, the risk of not displaying an appropriate image of themselves through their food and eating choices was more prominent than risk perceptions related to impacts of food choices on well-being and performance. Difficulties in classifying foods as “good” or “bad” enhanced their uncertainty. Originality/value: The results suggest that health-promotion activities for young people should focus not only on how to feed their bodies but also on how to avoid feeding their anxieties.

    • Role-play is a useful pedagogic tool because it involves active participation and facilitates various ways of expression. However, role-play has received less attention as a research method. We have used researcher-initiated role-play with subsequent focus group interview in a study of adolescents’ con-ceptions about food messages. In this paper we will use our experiences from this empirical study to describe and evaluate the use of researcher-initiated role-play with subsequent focus group interview as a method for data collec-tion. In our empirical study the participants chose and played role characters representing agents they think convey food messages to them in their every-day life. They planned, bought, cooked and ate the food, and after that they participated in a focus group interview. Our experience is that this method enables participants to be active throughout the research process. They influ-ence how the role-play proceeds, which diverts the control from the re-searcher to the participants and reduces the power hierarchy. Furthermore, this method promotes reflection among the participants. Both because they are acting in roles and because they are confronted with interaction with authentic food. In our study this contributed to a rich data material. There-fore, we consider this method to be a promising research method for studies concerning everyday practices.     • This is the final report of the research project Environmentally differentiated port dues. The purposes of the research are to examine how environmentally differentiated dues and incentives in ports can reduce the environmental impact caused by transport modes that call at the port, and their consequences from legal, political and goods flow perspectives. Both land and sea transport are addressed. The project examines how ports, as important parts of international transport chains, can contribute to the environmental and climate objectives, by introducing environmentally differentiated port dues to promote a shift to more environmentally efficient transport, vehicles, ships, technologies and alternative fuels.
