  • An ontology-based context-aware system for smart homes : E-care@home

    • Smart home environments have a significant potential to provide for long-term monitoring of users with special needs in order to promote the possibility to age at home. Such environments are typically equipped with a number of heterogeneous sensors that monitor both health and environmental parameters. This paper presents a framework called E-care@home, consisting of an IoT infrastructure, which provides information with an unambiguous, shared meaning across IoT devices, end-users, relatives, health and care professionals and organizations. We focus on integrating measurements gathered from heterogeneous sources by using ontologies in order to enable semantic interpretation of events and context awareness. Activities are deduced using an incremental answer set solver for stream reasoning. The paper demonstrates the proposed framework using an instantiation of a smart environment that is able to perform context recognition based on the activities and the events occurring in the home.

    • In this article we outline the details of an ontology, called SmartEnv, proposed as a representational model to assist the development process of smart (i.e., sensorized) environments. The SmartEnv ontology is described in terms of its modules representing different aspects including physical and conceptual aspects of a smart environment. We propose the use of the Ontology Design Pattern (ODP) paradigm in order to modularize our proposed solution, while at the same time avoiding strong dependencies between the modules in order to manage the representational complexity of the ontology. The ODP paradigm and related methodologies enable incremental construction of ontologies by first creating and then linking small modules. Most modules (patterns) of the SmartEnv ontology are inspired by, and aligned with, the Semantic Sensor Network (SSN) ontology, however with extra interlinks to provide further precision and cover more representational aspects.The result is a network of 8 ontology patterns together forming a generic representation for a smart environment. The patterns have been submitted to the ODP portal and are available on-line at stable URIs.

  • Comparison of steaming and boiling of root vegetables for enhancing carbohydrate content and sensory profile

    • Root vegetables have unique techno-functional and nutritional properties however, their use in processed foods is limited to a few species, partially due to a lack of knowledge related to the impact of thermal treatments on the sensory properties. This study investigated the effect of steaming and boiling on the microstructure, mechanical properties, and sensory profile of three model root vegetables with distinct carbohydrate composition: Jerusalem artichoke (Helianthus tuberosus L.), parsnip (Pastinaca sativa), and beetroot (Beta vulgaris). Thermally treated Jerusalem artichoke and parsnip showed higher content of cell wall polysaccharides, particularly β-glucans (e.g. cellulose) and pectic components, compared to raw. Steaming produced more cell shrinkage and loss of cell-cell adhesion than boiling, leading to softer vegetables. Processed beetroot showed loss of cell turgor and drastic softening but not clear changes in overall carbohydrate content. The scores for several flavour and in-mouth attributes were higher for steamed vegetables compared to boiled. Our results give insights on the processability of root vegetables towards products with enhanced sensory and nutritional properties.

  • Sodium Reduction in Bouillon : Targeting a Food Staple to Reduce Hypertension in Sub-saharan Africa

    • Bouillon cubes are a staple ingredient used in Sub-saharan African countries providing flavor enhancement to savory foods. Bouillon has been identified as a vehicle for fortification to overcome micronutrient deficiencies in Sub-saharan Africa. However, bouillon has a high sodium content (and in addition with other foods) contributes to dietary sodium intake above recommended guidelines. High dietary sodium intake is a key risk factor for hypertension and cardiovascular disease (CVD). Africa has the highest rates of hypertension and CVD globally with nearly half the adult population above 25 years affected. This review presents current state of research on sodium reduction strategies in bouillon. The key challenge is to reduce sodium levels while maintaining optimal flavor at the lowest possible production cost to ensure bouillon continues to be affordable in Sub-saharan Africa. To produce lower sodium bouillon with acceptable flavor at low cost will likely involve multiple sodium reduction strategies; direct reduction in sodium, sodium replacement and saltiness boosting flavor technologies. Efforts to reduce the sodium content of bouillon in Sub-saharan Africa is a worthwhile strategy to: (i) lower the overall sodium consumption across the population, and (ii) deliver population-wide health benefits in a region with high rates of hypertension and CVD.   • Design and Validation of 3D-Printed Tools for Stamping of DP600

    • This paper is focused on automotive stamping tools & dies and the impact of 3D metal printing on design and production of such tools & dies. Forming (U-bend) and trimming/cutting/blanking tools & dies designed both conventionally and by topology optimization were 3D-printed, using Laser-based Powder Bed Fusion (LPBF), in the maraging steel DIN 1.2709. These 3D-printed tools were then used to form (U-bend) and trim/cut/blank 2-mm thick hot-dip galvanized DP600. An approval of the forming tool required that 50,000 U-bends were formed in 2-mm thick DP600 without any surface scratches on the sheet metal part. An approval of the trimming/cutting/blanking tool required 100,000 trimming strokes with this tool, where the maximum (sheet metal) burr height was lower than 0.2 mm (lower than 10% of the sheet thickness (2 mm in this study)). The 3D-printed forming and trimming/cutting/blanking tools & dies - both the conventionally designed and the topology optimized versions – managed the criteria mentioned above and were therefore approved. The approval means that these concepts can now be used to make production stamping tools and dies. This paper describes the topology optimization, the forming & trimming/cutting/blanking testing, the results yielding an approval of the 3D-printed tool concepts, and the 3D-printed production tools for stamping of DP600.

    • Preparation of a bolus is a complex process with both food comminution and degree of lubrication with saliva playing an important role in a safe swallow. Swallowing disorders i.e. dysphagia, are especially present among the elderly population and often lead to choking and further health complications. The aim of this research was to investigate the relationship between the perception of ease of swallowing in the elderly and the rheological parameters of particulated foods, using broccoli purees as a model system. Particulated foods can be described as a concentrated dispersion of plant particles in a fluid phase. The effect of the fluid phase (Newtonian vs. shear thinning) and dispersed phase (plant particles with different size distribution and morphology) on the rheological properties of simulated boli was studied by characterising shear viscosity, viscoelasticity, yield stress, extensional viscosity and cohesiveness. Ease of swallowing and mouthfeel were evaluated by a semi trained healthy elderly panel (n = 19, aged 61 to 81). Ease of swallowing was correlated with the presence of yield stress and extensional viscosity in the bolus, characteristic of boli with xanthan gum as the fluid phase. Although the properties of the fluid phase played a dominant role in the ease of swallowing, compared to the dispersed phase, both components played a role in the rheological properties of the bolus and the perception of ease of swallowing by the elderly panel. These results provide insights into the design of personalised foods for populations with specific needs such as those suffering from swallowing disorders.

    • The "common sense" intervention by toxicology journal editors regarding proposed European Union endocrine disrupter regulations ignores scientific evidence and well-established principles of chemical risk assessment. In this commentary, endocrine disrupter experts express their concerns about a recently published, and is in our considered opinion inaccurate and factually incorrect, editorial that has appeared in several journals in toxicology. Some of the shortcomings of the editorial are discussed in detail. We call for a better founded scientific debate which may help to overcome a polarisation of views detrimental to reaching a consensus about scientific foundations for endocrine disrupter regulation in the EU.

  • Towards causal knowledge graphs - position paper

    • In this position paper, we highlight that being able to analyse the cause-effect relationships for determining the causal status among a set of events is an essential requirement in many contexts and argue that cannot be overlooked when building systems targeting real-world use cases. This is especially true for medical contexts where the understanding of the cause(s) of a symptom, or observation, is of vital importance. However, most approaches purely based on Machine Learning (ML) do not explicitly represent and reason with causal relations, and may therefore mistake correlation for causation. In the paper, we therefore argue for an approach to extract causal relations from text, and represent them in the form of Knowledge Graphs (KG), to empower downstream ML applications, or AI systems in general, with the ability to distinguish correlation from causation and reason with causality in an explicit manner. So far, the bottlenecks in KG creation have been scalability and accuracy of automated methods, hence, we argue that two novel features are required from methods for addressing these challenges, i.e. (i) the use of Knowledge Patterns to guide the KG generation process towards a certain resulting knowledge structure, and (ii) the use of a semantic referee to automatically curate the extracted knowledge. We claim that this will be an important step forward for supporting interpretable AI systems, and integrating ML and knowledge representation approaches, such as KGs, which should also generalise well to other types of relations, apart from causality. © 2020 for this paper by its authors.
