    • This is an exploratory paper where the main idea is to develop an analysis of dining as a multidimensional experience. In order to assess the relative importance of various aspects of restaurant services, customers were asked to estimate their willingness to pay for six aspects of the dining experience: food, service, fine cuisine, restaurant interior, good company and other customers. Customers were asked to evaluate an ideal restaurant experience as well as their latest restaurant experience. Thus the actual evaluation could be compared with an ideal value to explore where restaurants have opportunities to enhance customers’ restaurant experiences. Results clearly indicate that social needs are important for customers at evening restaurants whereas physiological needs dominate for customers at lunch restaurants.

    • This study addresses the need for more knowledge about the growing number of food tourists. The objective is to describe the effects of enduring food involvement on consumers’ behaviour in terms of food consumption, food-related activities and travel. The theoretical concepts of involvement, gastronomic identity and travel motives are elaborated to model the causes and effects of food involvement. Five proposals are suggested about involvement having effects on consumers’ identities, attitudes, motivations and travel behaviour. The five proposals are tested by first identifying a category of “food enthusiasts” defined as the top 25% in a population of urban citizens in terms of enduring food involvement and second by comparing “food enthusiasts” to other consumers. All five proposals are strongly supported by survey data. Practical implications are that destination management organizations and restaurants, as well as tourism attractions serving food, cannot ignore that a large segment of the urban population is highly involved in food. There are many good reasons to serve food that fulfils normal criteria for sustainable food, that is healthy and that is locally produced.

    • Detta är den andra rapporten i en ny serie, Utveckling av undervisning och examination i högre utbildning, utgiven av Universitetspedagogiska enheten.I denna rapport presenteras sex utvecklingsprojekt från olika kurser inom sjuksköterskeprogrammet och lärarutbildningen. Lärarna har inom ramen för olika forskningscirklar formulerat ett förändringsområde, en fråga som de arbetat tillsammans med. Det handlar bl.a. om hur lärandemål kan tydliggöras i undervisning och examineras, hur användning av digitalt stöd påverkar lärarrollen och känslan av närhet och social närvaro vid distansutbildning samt hur flipped classroom och film kan användas i undervisningen. Arbetet pågick under ca sex månader och handleddes av personal från dåvarande Kompetensutvecklingsenheten.Publikationer av utvecklings- eller forskningsprojekt i den universitets-gemensamma rapportserien sprider kunskap och erfarenheter från olika ämnes- och utbildningsområden. Lärare eller undervisande personal som publicerar texter i rapportserien kan genom detta skapa en bas för pedagogisk meritering såväl inför ansökan om att bli befordrad som meriterad och eller excellent inom undervisning och examination vid Karlstads universitet.Den universitetspedagogiska enheten kommer kontinuerligt att ge ut rapporter inom området undervisning och lärande där verksamma lärare och medarbetare delar med sig av erfarenheter från utvecklingsarbete inom undervisning och examination.
