  • Food ethics: a Wide Field in Need of Dialogue

    • There are a few things which are obviously a central part of everyone’s life, at all times, and all over the globe, and which are crucial for our wellbeing. Food is, like sex, such an essential ingredient of our life, an ingredient of what we expect of a good life. What is on our plates is always a result of nature and culture, to the extent that it may seem hard to find commonalities in our global diet. As academics we have asked different questions about food. For a long time these questions have been dominated by the quest to secure enough food and to improve what we have got. It is, however, noteworthy that we also always have asked the normative questions in relation to food: Is it right to eat this kind of food? Do we produce our food the right way? Is there injustice and bad power in the way we distribute the food? Are we lied to in regard to what is on our plate? When we enter the normative realm, we enter the realm of ethics, understood in a wide and comprehensive way. As all normative questions, we need to be well informed by knowledge about how the world is, and what is at stake and for whom. We call this food ethics. Food ethics raises issues and asks questions in relation to food all along the value chains. It also puts things into relation with each other. At the same time it disentangles complex heaps of factors and pieces of knowledge, and looks for guidance. It is issue driven, rather than interest driven. It unites scholars with farmers and fishermen, chefs with industry, consumers with lawyers, and food citizens with authorities. As a young field within academia it is important to guard against efforts to appropriate the field for narrow interests, and instead to combine the natural and social sciences in analysing and addressing the challenges. We do not necessarily call for the grand ethical theory that explains it all, but rather start with the simple things in a very complex overall picture. We want to draw attention to ethically significant facts, discuss problematic developments, point to genuine dilemmas, learn about food relevant contexts and history, and look for individual, professional and institutional responses to ethical challenges and issues. Thus, one of the missions of this new journal Food Ethics, is to widen the scope and the discussion on the topic, and to be inclusive in terms of who has something to contribute to the field. There is no escaping from confronting very complex issues when it comes to managing one of the most basic needs we all have, food. As editors of this new journal we maintain that food ethics deserves special and inter-disciplinary attention by researchers, that it is not sufficiently dealt with by what is currently known as bioethics, that it is intrinsically connected with the so-called grand societal challenges of our time, that it is a globally important field which demands particular attention to complexities and uncertainties, as much as it needs to be explicit about what values are at stake and for whom, and which normative principles it touches upon.

  • Dairy farmer and farm staff attitudes and perceptions regarding daily milk allowance to calves

    • The benefits of feeding calves more milk are increasingly being recognized by dairy farmers. However, most producers have still not implemented higher feeding plans. The aim of the present study was to gain a deeper understanding of farmer and farm staff attitudes, and the perceptions and factors considered in their decision-making regarding daily milk allowances. We collected data through focus group interviews with dairy farmers, farm managers, and calf-care workers who were selected using purposive and snowball sampling. In total, 40 persons (24 women and 16 men) joined a focus group interview (6 in all, each with 5–8 participants). Interviews were recorded, and recordings were transcribed and analyzed thematically. Participants had contrasting opinions about the minimum, maximum, and recommended daily milk allowances to their calves. Their suggested lowest daily milk allowance to sustain animal welfare ranged from 4 to 8–10 L and the maximum allowance from 6 to 15 L. We found that farmers' and farm staff's choices and recommendations of milk-feeding protocols were influenced by a large number of factors that could be grouped into 4 themes: (1) Life beyond work, (2) Farm facilities and equipment, (3) Care of the calves, and (4) Profitability and production. Participants' considerations were similar and aimed to maximize daily milk allowance based on farm conditions. However, the allowances they described as optimal for their calves often differed from what they considered practically feasible. We found that the care of the calves and the well-being of the owners and the staff was central in the participants' decision-making, but that this care perspective was challenged by the social and economic sustainability of the farm. Most participants fed their calves twice daily and did not think that increasing that number would be practically feasible. Our results indicate that the participants' viewpoints regarding calves were important for their decision-making about milk allowances. We suggest that a more holistic perspective should be used when advising farmers about milk allowances, putting particular emphasis on the caring and social sustainability aspects of the individual farm.

  • New insight into social relationships in dairy cows and how time of birth, parity, and relatedness affect spatial interactions later in life

    • Social interactions between cows play a fundamental role in the daily activities of dairy cattle. Real-time location systems provide on a continuous and automated basis information about the position of individual cows inside barns, offering a valuable opportunity to monitor dyadic social contacts. Understanding dyadic social interactions could be applied to enhance the stability of the social structure promoting animal welfare and to model disease transmission in dairy cattle. This study aimed to identify the effect of different cow characteristics on the likelihood of the formation and persistence of social contacts in dairy cattle. The individual position of the lactating cows was automatically collected once per second for 2 wk, using an ultra-wideband system on a Swedish commercial farm consisting of almost 200 dairy cows inside a freestall barn. Social networks were constructed using the position data of 149 cows with available information on all characteristics during the study period. Social contacts were considered as a binary variable indicating whether a cow pair was within 2.5 m of each other for at least 10 min per day. The role of cow characteristics in social networks was studied by applying separable temporal exponential random graph models. Our results revealed that cows of the same parity interacted more consistently, as well as those born within 7 d of each other or closely related by pedigree. The repeatability of the topological parameters indicated a consistent short-term stability of the individual animal roles within the social network structure. Additional research is required to elucidate the underlying mechanisms governing the long-term evolution of social contacts among dairy cattle and to investigate the relationship between these networks and the transmission of diseases in the dairy cattle population. .

  • The genetic consequences of dog breed formation-Accumulation of deleterious genetic variation and fixation of mutations associated with myxomatous mitral valve disease in cavalier King Charles spaniels

    • Selective breeding for desirable traits in strictly controlled populations has generated an extraordinary diversity in canine morphology and behaviour, but has also led to loss of genetic variation and random entrapment of disease alleles. As a consequence, specific diseases are now prevalent in certain breeds, but whether the recent breeding practice led to an overall increase in genetic load remains unclear. Here we generate whole genome sequencing (WGS) data from 20 dogs per breed from eight breeds and document a similar to 10% rise in the number of derived alleles per genome at evolutionarily conserved sites in the heavily bottlenecked cavalier King Charles spaniel breed (cKCs) relative to in most breeds studied here. Our finding represents the first clear indication of a relative increase in levels of deleterious genetic variation in a specific breed, arguing that recent breeding practices probably were associated with an accumulation of genetic load in dogs. We then use the WGS data to identify candidate risk alleles for the most common cause for veterinary care in cKCs-the heart disease myxomatous mitral valve disease (MMVD). We verify a potential link to MMVD for candidate variants near the heart specific NEBL gene in a dachshund population and show that two of the NEBL candidate variants have regulatory potential in heartderived cell lines and are associated with reduced NEBL isoform nebulette expression in papillary muscle (but not in mitral valve, nor in left ventricular wall). Alleles linked to reduced nebulette expression may hence predispose cKCs and other breeds to MMVD via loss of papillary muscle integrity.

    • Several strains from the genus Trichoderma (Ascomycetes, Hypocreales) are commercially used as biocontrol agents, e.g. in formulations containing the two Trichoderma strains IMI206039 (Hypocrea parapilulifera B.S. Lu, Druzhinina & Samuels) and IMI206040 (T. atroviride P. Karst). To quantify the presence of the two isolates after application, we developed primers for SCAR markers (Sequence-Characterised Amplified Region). In order to quantify both fungal strains simultaneously, we also designed fluorophore-labelled probes distinguishing the two strains, to be used in combination with the SCAR primers. In incubations of two different soils, artificially inoculated and maintained under controlled conditions, the quantification through amplification with the SCAR markers in qPCR and through colony-forming units from plate counting correlated well. Further tests of the markers on samples taken from a golf green treated with a product containing both strains indicated that the two biocontrol strains did not establish, either on the golf green or in the surrounding area.

    • There is a considerable amount of literature dealing with inference about the parameters in a heteroscedastic one-way random-effects ANOVA model. In this paper, we primarily address the problem of improved quadratic estimation of the random-effect variance component. It turns out that such estimators with a smaller mean squared error compared with some standard unbiased quadratic estimators exist under quite general conditions. Improved estimators of the error variance components are also established.

  • Human-Human and Human-Animal Interaction : Some Common Physiological and Psychological Effects

    • The aim of the present thesis was to investigate hormonal and physiological effects in mothers during a breastfeeding session and in dogs and their owners in response to short-term interaction. In study one, sixty-six mothers receiving either exogenous oxytocin infusion and/or epidural analgesia (EDA) during labor or intramuscular oxytocin injection post partum were studied. Oxytocin, prolactin, adrenocorticotrophic hormone (ACTH) and cortisol levels, as well as blood pressure were measured during a breastfeeding session two days after birth. In response to breastfeeding two days after birth, the mothers displayed a pulsatile release of oxytocin and increasing prolactin levels. In addition, the activity in the HPA-axis was reduced and maternal blood pressure decreased. The results also show that EDA administration in combination with oxytocin during labor resulted insignificantly lower oxytocin levels and higher cortisol levels, as well as higher bloodpressure in response to breastfeeding two days after birth, compared to EDA administration alone. In addition, oxytocin infusions dose-dependently lowered the mothers’ endogenous oxytocin levels two days after birth. In study two, ten female dog owners and their male Labrador dogs participated, together with ten controls. Their levels of oxytocin, cortisol and insulin, as well as their heart rate, were measured. The connection between the quality of the dogowner relationship and hormone levels was also explored. Short-term interaction between dogs and their owners resulted in oxytocin release in both species and their cortisol levels and heart rate were also affected. Oxytocin levels and positive attitudes regarding the dog-owner relationship were positively correlated. In conclusion, both human-human and human-animal interactions induce oxytocin release and promote oxytocin mediated effects, such as decreasing cortisol levels and blood pressure. In addition, social interaction and oxytocin levels arepositively related.

  • Where do we find missing data in a commercial real-time location system? Evidence from 2 dairy farms

    • Real-time indoor positioning using ultra-wideband devices provides an opportunity for modern dairy farms to monitor the behavior of individual cows; however, missing data from these devices hinders reliable continuous monitoring and analysis of animal movement and social behavior. The objective of this study was to examine the data quality, in terms of missing data, in one commercially available ultra-wideband–based real-time location system for dairy cows. The focus was on detecting major obstacles, or sections, inside open freestall barns that resulted in increased levels of missing data. The study was conducted on 2 dairy farms with an existing commercial real-time location system. Position data were recorded for 6 full days from 69 cows on farm 1 and from 59 cows on farm 2. These data were used in subsequent analyses to determine the locations within the dairy barns where position data were missing for individual cows. The proportions of missing data were found to be evenly distributed within the 2 barns after fitting a linear mixed model with spatial smoothing to logit-transformed proportions (mean = 18% vs. 4% missing data for farm 1 and farm 2, respectively), with the exception of larger proportions of missing data along one of the walls on both farms. On farm 1, the variation between individual tags was large (range: 9–49%) compared with farm 2 (range: 12–38%). This greater individual variation of proportions of missing data indicates a potential problem with the individual tag, such as a battery malfunction or tag placement issue. Further research is needed to guide researchers in identifying problems relating to data capture problems in real-time monitoring systems on dairy farms. This is especially important when undertaking detailed analyses of animal movement and social interactions between animals.

    • ContextIn Sweden, 34% of herds in official statistics 2021 (77% of the cows) have an automatic milking system (AMS) and keep 19% of the dairy cows.ObjectiveThis study should be considered in relation to the rapid increase of digitalisation in agriculture. It aimed at investigating Swedish farmers’ experiences and reflections in dairy farming concerning AMS use from a care perspective, based on two research questions: 1) What kinds of success factors and management challenges do farmers experience with AMS usage? and 2) How do farmers view their work environment in this kind of system?MethodsA mixed method approach was performed, using method triangulation through a questionnaire, interviews, and field visits. The Activity Theory (AT) was used as a theoretical lens to consider care practice in the dairy farming as a learning system.Results and conclusionsParticipating dairy farmers were found to be in a continuous learning process on different levels in their system, from detailed problems with an individual cow or the herd to the whole dairy system. Implementation of AMS required learning in order to manage, and thus care for, a system comprising of animals, technology, and humans, to increase business viability. In successful AMS use, willingness to learn, adapt to the local situation, and continually improve practice, or care as a patterning of activities, appeared to be the most important factors. With more people involved, differentiations were possible, which in turn accentuated the need for more trained staff who can perform more complicated tasks. The findings indicated high importance of experience and a ‘stockperson's eye’, in combination with tool-mediated seeing using data from the robot, in developing enhanced professional vision and good care. A good stockperson had broad competence combining a stockperson's eye with experience with robot data. One of the greatest challenges for dairy farms was finding a good stockperson as staff or advisor. Increased flexibility in work and better physical health were important driving forces for implementing AMS, while handling alarms was mentally stressful and gave different perspectives on AMS vulnerability. Overall, the analysis of the collected data showed that AMS had brought major, primarily positive, changes in daily work and increased work satisfaction for most farmers, with a clear majority of the respondents feeling good in their work situation and enjoying their work.SignificanceApplication of AT in studying AMS from a care perspective, represents a shift from traditional research that normally addresses technological inventions, to studying farmers’ socio-technical system. The AT lens revealed the work practices in performing care, as a patterning of activities accomplished by a tinkering learning process, in the rich and messy matrix of humans, cows, and technology.

  • Social Support in a Novel Situation Aimed for Stunning and Euthanasia of Pigs May Be Increased by Familiar Pigs—A Behavioural Study with Weaners

    • The common method of stunning pigs using high concentration carbon dioxide prior to slaughter poses an animal welfare issue, as the gas is aversive. Proof of concept for using nitrogen gas encapsulated in high-expansion foam as an alternative non-aversive method for stunning pigs has recently been presented. However, the individually tested pigs showed distress-related responses to foam exposure, regardless of whether it was nitrogen- or air-filled. This study examined the effect of companionship from a familiar or unfamiliar pig on behaviours in 72 nine-weeks old pigs during exposure to air-filled foam. Escape attempts were observed by 75% of solitary pigs, 42% of pigs with unfamiliar conspecifics, and 33% of pigs with familiar conspecifics. Familiar pig pairs clearly preferred social contact during foam exposure, whereas this was not as clear in unfamiliar pig pairs, and their motivation for social contact could have multiple explanations. The results from this study highlight the importance of contact with conspecifics when studying animal welfare and suggest that familiarity between pigs is important for social support, thus emphasizing the importance of maintaining social groups to reduce distress in pigs at slaughter. © 2023 by the authors.

  • Microbial changes during storage of moist crimped cereal barley grain under Swedish farm conditions

    • This Study investigated feed hygiene during airtight storage of non-dried barley grain under farm conditions. Microorganisms on the grain were sampled and quantified in seven Swedish firms throughout the storage period using culture dependent methods. The dominant lactic acid bacteria (LAB) and yeasts were identified by rRNA gene sequencing and moulds by morphological characterisation. Moisture content (MC) and pH of the grain were also monitored. It was difficult to obtain the optimal MC(0.30-0.45 g/g) that is necessary to initiate fermentation in the grain. Feed hygiene was maintained during storage of cereals when MC below 0.17 g/g. Intermediate MC (0.17-0.23 g/g) of the grains was conducive to mould growth, including growth of potential producers of mycotoxins, which can diminish feed safety and nutritional value. Enterobacteriaceae were found in all barleys, even at low MC, but their numbers were substantially decreased when the number of LAB was high. True fermentation of moist crimped cereal grains was only obtained on one farm with all initial barley MC of 0.3 g/g. Here, LAB reached high numbers during storage, whereas numbers of spoilage microorganisms that may reduce feed hygiene decreased considerably. However, the pH of the barley did not differ among farms. Storage stability in airtight stored barley may thus be the result of low oxygen tension, viz. airtight storage, and competition for nutrients by the microorganisms, rather than formation of lactic acid. At harvest, Enterococcus caccae dominated the LAB Population in five barleys and Lactobacillus fermentum at the remaining two. The dominant yeast species were Aureobasidium pullulans, Cryptococcus wieringae, Kazachstania aerobia and Rhodotorula glutinis. After storage, L fermentum was dominant among the LAB. The yeast species composition was highly diverse and differed among barleys. Among others, C. wieringae, Debaryomyces hansenii, K. aerobia, R. glutinis and Sporobolomyces ruberrimus were detected. This Study shows that the microbial population in airtight stored moist barley is highly diverse and not predictable. Thus, it may be necessary to influence the microbial population in the storage system by adding a starter culture.

    • Preservation of moist crimped cereal grain is made feasible through fermentation by lactic acid bacteria. Climatic variations make it difficult to harvest at moisture contents (0.30-0.45g/g) to support optimal fermentation under practical conditions. Therefore, the yeast, Pichia anomala J121, previously found to prevent mould spoilage and improve preservation of moist grain in malfunctioning airtight silos, was added to moist crimped cereal grain stored in large plastic tubes. Freshly harvested barley grain was crimped and inoculated with P. anomala (105 colony-forming units/g grain). Due to the local weather conditions, harvest was delayed and moisture content in the cereal grain had decreased to 0.16-0.18g/g. P. anomala was inoculated into three batches of barley, each comprising 16tonnes packed into large plastic tubes. Three additional sets of plastic tubes were packed with cereal grain without addition of P. anomala. The grain tubes were left closed for 5 months, after which feeding to cattle commenced. In both the P. anomala inoculated and the control barley, the population diversity of lactic acid bacteria (LAB) was very high over the duration of storage. However, the dominant LAB shifted over the course of storage to Pediococcus pentosaceus and Lactobacillus paracasei, in inoculated and control barley, respectively. The yeast population in the inoculated barley was totally dominated by P. anomala during the entire storage period. In the control grain, the yeast population was more diverse, displaying shifts in the dominant species during storage. Pichia burtonii was the dominant species at the last sampling occasion. In P. anomala inoculated barley, numbers of naturally occurring moulds were reduced by about two log units, and the number of Enterobacteriaceae was reduced to below detection.

    • För ett par veckor sedan var jag i Amsterdam och talade om etiska dilemman och utmaningar i arbetet med antibiotikaresistens i djurhållning och veterinärmedicin på en konferens. ”Från fabrik till gödselstack” var devisen för mitt bidrag, för att framhålla att djurhållningens användning av antibiotika – precis som sjukvårdens – är en del av en större helhet, där även produktionssystemen för läkemedel och mat (och friska djur och människor), och naturmiljön ingår. Varje del både bidrar till utmaningen med resistens – att vår användning och hantering av dessa viktiga mediciner gör dem obrukbara – och utgör löften för att sätta in åtgärder som kan mildra problemet. Alla sådana åtgärder kommer samtidigt ha nackdelar och kostnader – därav behovet att analysera etiken. På konferensen fick jag också chans att förkovra mig i olika slags forskning om hur jordbruk och annan djurhållning kan hantera antibiotikaresistensen bättre. Jag lärde mig då att området utgör en riktig gyllene triangel – på gott och ont.

    • The incidence of cats being diagnosed with feline hyperthyroidism (FH) has increased greatly since it was first described in 1979. The cause of FH has not been established. Hypothetically, there is a link between increasing FH and exposure to brominated flame retardants. Much greater polybrominated diphenyl ethers (PBDE) concentrations have been reported in cat serum compared with human serum, likely due to cat licking behaviour. This study aimed to extend the present identification of brominated compounds in cat serum, with a focus on hydroxylated metabolites of PBDE, to improve the understanding of feline metabolism of PBDEs. A pooled serum sample from 30 Swedish pet cats with FH was analysed, and brominated species were identified. The results showed exposure to the discontinued flame retardant decabromobiphenyl (BB-209) and technical penta- and octa-BDEs. Altogether 12 PBDE congeners were identified along with 2'-MeO-BDE68. Furthermore, 2,4-dibromophenol, 2,4,6-, 2,4,5- and 2,3,4-tribromophenol plus 2'-OH-BDE68, 6-OH-BDE47, 5-OH-BDE47, 4'-OH-BDE49 were identified. 2,4,6-tribromophenol and 6-OH-BDE47 were the most prominent species in cat serum. Considering that these are natural products, it can be concluded that metabolism of PBDEs to OH-PBDEs is not a major route of PBDE elimination in cats. It is notable that BB-209, 6-OH-BDE47, and 2,4,6-tribromophenol all suggested that endocrine-disrupting chemicals were present in high concentrations in cat serum.

    • Purpose This paper investigates different methodologies of handling co-products in life cycle assessment (LCA) or carbon footprint (CF) studies. Co-product handling can have a significant effect on final LCA/CF results, and although there are guidelines on the preferred order for different methods for handling co-products, no agreed understanding on applicable methods is available. In the present study, the greenhouse gases (GHG) associated with the production of 1 kg of energy-corrected milk (ECM) at farm gate is investigated considering co-product handling. Materials and methods Two different milk production systems were used as case studies in the investigation of the effect of applying different methodologies in coproduct handling: (1) outdoor grazing system in New Zealand and (2) mainly indoor housing system with a pronounced share of concentrate feed in Sweden. Since the cows produce milk, meat (when slaughtered), calves, manure, hides, etc., the environmental burden (here GHG emissions) must be distributed between these outputs (in the present study no emissions are attributed to hides specifically, or to manure which is recycled on-farm). Different methodologically approaches, (1) system expansion (two cases), (2) physical causality allocation, (3) economic allocation, (4) protein allocation and (5) mass allocation, are applied in the study. Results and discussion The results show large differences in the final CF number depending on which methodology has been used for accounting co-products. Most evident is that system expansion gives a lower CF for milk than allocation methods. System expansion resulted in 63- 76% of GHG emissions attributed directly to milk, while allocation resulted in 85-98%. It is stressed that meat is an important by-product from milk production and that milk and beef production is closely interlinked and therefore needs to be considered in an integrated approach. Conclusions To obtain valid LCA/CF numbers for milk, it is crucial to account for by-products. Moreover, if CF numbers for milk need to be compared, the same allocation procedure should be applied. © 2011 Springer-Verlag.

    • The carbon footprint (CF) of milk production was analysed at the farm gate for two contrasting production systems; an outdoor pasture grazing system in New Zealand (NZ) and a mainly indoor housing system with pronounced use of concentrate feed in Sweden (SE). The method used is based on the conceptual framework of lifecycle assessment (LCA), but only for greenhouse gas (GHG) emissions. National average data were used to model the dairy system in each country. Collection of inventory data and calculations of emissions were harmonised to the greatest extent possible for the two systems. The calculated CF for 1kg of energy corrected milk (ECM), including related by-products (surplus calves and culled cows), was 1.00kg carbon dioxide equivalents (CO2e) for NZ and 1.16kg CO2e for SE. Methane from enteric fermentation and nitrous oxide emissions from application of nitrogen (as fertiliser and as excreta dropped directly on the field) were the main contributors to the CF in both countries. The most important parameters to consider when calculating the GHG emissions were dry matter intake (DMI), emission factor (EF) for methane from enteric fermentation, amount of nitrogen applied and EF for direct nitrous oxide emissions from soils. By changing one parameter at a time within 'reasonable' limits (i.e. no extreme values assumed), the impact on the total CF was assessed and showed changes of up to 15%. In addition, the uncertainty in CF estimates due to uncertainty in EF for methane from enteric fermentation and nitrous oxide emissions (from soil and due to ammonia volatilisation) were analysed through Monte Carlo simulation. This resulted in an uncertainty distribution corresponding to 0.60-1.52kg CO2e kg-1 ECM for NZ and 0.83-1.56kg CO2e kg-1 ECM for SE (in the prediction interval 2.5-97.5%). Hence, the variation within the systems based on the main EF is relatively large compared with the difference in CF between the countries. © 2011 Elsevier Ltd.

    • Measuring sustainability at farm level is a priority for both research and policy and requires sustainability indicators to track progress. Indicators make the sustainability concept more concrete and guide farm level decisions, playing a decisive role in determining food system impacts on societies and the environment. Data availability is often a limiting factor when choosing indicators, but not enough attention is paid to the role of data in indicator construction and assessment results. This paper assessed the critical role of data in indicator construction and the potential limitations that current data availability imposes on farm-level sustainability assessments, using the example of dairy farms in Sweden. To do so we used a five-step approach consisting of a literature review, an inventory of data sources, an expert consultation, a matching and gap analysis, and a critical assessment. We found that 20 indicators categorized under 12 out of 20 sustainability themes had measurement issues due to missing scope, temporary data, or additional data requirements. At least some indicators were measurable within all themes in the social and economic dimensions while all indicators for pesticides, non-renewable energy, and soil quality in the environmental dimension had measurement issues. In the critical assessment, we argue that for some indicators, there are trade-offs between data availability and issues of comprehensibility and analytical validity. Furthermore, we found that no single data source could be used to measure all themes; which means that merging of different data sets is needed for a broader on-farm sustainability assessment. Our findings are relevant for the discussion on sustainability indicators and will inform future programs aimed at collecting sustainability data at farm level, which should consider the broad data needs identified and the potential to merge data to enable holistic sustainability assessments.

    • Position data from real-time indoor positioning systems are increasingly used for studying individual cow behavior and social behavior in dairy herds. However, missing data challenges achieving reliable continuous activity monitoring and behavior studies. This study investigates the pattern of missing data and alternative interpolation methods in ultra-wideband based real-time indoor positioning systems in a free-stall barn. We collected 3 months of position data from a Swedish farm with around 200 cows. Data sampled for 6 days from 69 cows were used in subsequent analyzes to determine the location and duration of missing data. Data from 20 cows with the most reliable tags were selected to compare the effects of four different interpolation methods (previous, linear interpolation, cubic spline data interpolation and modified Akima interpolation). By comparing the observed data with the interpolations of the simulated missing data, the mean error distance varied from around 55 cm, using the previously last observed position, to around 17 cm for modified Akima. Modified Akima interpolation has the lowest error distance for all investigated activities (rest, walking, standing, feeding). Larger error distances were found in areas where the cows walk and turn, such as the corner between feeding and cubicles. Modified Akima interpolation is expected to be useful in the subsequent analyses of data gathered using real-time indoor positioning systems.

    • Methane (CH4) emissions from manure management on livestock farms are a key source of greenhouse gas emissions in some regions and for some production systems, and the opportunities for mitigation may be significant if emissions can be adequately documented. We investigated a method for estimating CH4 emissions from liquid manure (slurry) that is based on anaerobic incubation of slurry collected from commercial farms. Methane production rates were used to derive a parameter of the Arrhenius temperature response function, lnA', representing the CH4 production potential of the slurry at the time of sampling. Results were used for parameterization of an empirical model to estimate annual emissions with daily time steps, where CH4 emissions from individual sources (barns, outside storage tanks) can be calculated separately. A monitoring program was conducted in four countries, i.e., Denmark, Sweden, Germany and the Netherlands, during a 12-month period where slurry was sampled to represent barn and outside storage on finishing pig and dairy farms. Across the four countries, lnA' was higher in pig slurry compared to cattle slurry (p < 0.01), and higher in slurry from barns compared to outside storage (p < 0.01). In a separate evaluation of the incubation method, in-vitro CH4 production rates were comparable with in-situ emissions. The results indicate that lnA' in barns increases with slurry age, probably due to growth or adaptation of the methanogenic microbial community. Using lnA' values determined experimentally, empirical models with daily time steps were constructed for finishing pig and dairy farms and used for scenario analyses. Annual emissions from pig slurry were predicted to be 2.5 times higher than those from cattle slurry. Changing the frequency of slurry export from the barn on the model pig farm from 40 to 7 d intervals reduced total annual CH4 emissions by 46 %; this effect would be much less on cattle farms with natural ventilation. In a scenario with cattle slurry, the empirical model was compared with the current IPCC methodology. The seasonal dynamics were less pronounced, and annual CH4 emissions were lower than with the current methodology, which calls for further investigations. Country-specific models for individual animal categories and point sources could be a tool for assessing CH4 emissions and mitigation potentials at farm level.

    • Drylands in Sub-Saharan Africa are subject to rapid and enduring population increase, agricultural expansion, land large-scale infrastructure developments, as well as climate change, affecting some 265 million pastoralists and agro-pastoralists. These changes are promoting a transition from traditional pastoralist ways of life characterized by seasonal mobility, towards more sedentary livelihoods based on more intensive and commercial uses of land-based resources. As part of of this ongoing transition, establishment of enclosures on pastoralist commons is emerging as a default, but highly contested, development pathway. Based on a review of the current enclosure debate across the natural, economic, and social sciences, with a geographical focus on the East African drylands, we discuss the potential and limitations of enclosures as land management tool, and propose a conceptual framework for how enclosures can act as an integral part of sustainable pastoralist land use. Such a framework constitute an important piece of the puzzle for more productively linking the urgent need of innovative ways of managing pastoralist rangelands, to the present international and national commitments to restoration of degraded lands.

    • This study explores dairy farmers’ accounts of farm animals in a context heavily influenced by the concept of farm animal welfare (FAW). We illustrate how external demands linked to FAW, performance concerns, and proximity to animals shape farmers’ formal and cognitive accounts of animals. We explain how different accounts underlie farmers’ accountability for animals. Using FAW as an example of a referent concept, we propose that accountability can be limited conceptually by its referent. This limit is not a matter of its (in)ability to account fully for all lived experiences. Rather, it is a matter of what one is or is not accountable for—such as the mortality rate but not culling—as well as assumptions regarding the referent—such as the nature of animal welfare and how it can be assessed and safeguarded. Even when it is conceptually bounded in this way, self-accountability has potential to alter farming practices by reflecting on caring about animals and on what this implies for oneself and the animals.

    • There are growing expectations that Information and Communication Technology (ICT) applications could help improve on-farm yields amongst smallholder farmers in developing countries, and consequently, food and nutrition security. However, few studies have quantified the actual contribution of ICT applications on farmers’ yields, and these studies predominantly focused on crop production. We assessed the potential of ICT applications to close milk yield gaps among small- and medium scale dairy cattle farmers in Africa. First, we developed a theoretical framework summarizing biophysical and socio-economic constraints that foster milk yield gaps and discussed which constraints can be addressed using ICT applications. Second, using a case study of a feeding advice application for dairy cattle pre-tested with farmers in rural Kenya, we analyzed how much stand-alone the application could contribute to close dairy cattle milk yield gaps. Our findings suggest that ICT applications could help address some existing biophysical and socio-economic constraints fostering milk yield gaps, including data collection for breeding programs, feeding management advice, and facilitating access to markets and capital. Our stand-alone ICT application closed yield gaps by 2 % to 6 % on representative farms. Several factors may explain the limited actual contribution of selected ICT applications to reduce existing milk yield gaps, including the quality of the input data and models used in ICT applications, and more structural constraints that cannot be addressed by digital tools. Therefore, although ICT applications could help address constraints to achieving higher milk yields on dairy farms, a significant contribution to improve yields may only be achieved when conditions surrounding their use are adequate.

    • The transportation of animals to slaughterhouses is a major welfare concern. The number of slaughterhouses has decreased over time in Europe due to centralisation. This is expected to increase transport time for animals and as a consequence negatively affect animal welfare. We propose an optimisation model based on a facility location model to perform strategic analysis to improve transportation logistics. The model is tested on the Swedish slaughter transport system. We show that, by strategic planning and redirection of transports while keeping the slaughterhouse capacities as of the originaldata, the potential exists to reduce transport distance by 25% for pigs and 40% for cattle. Furthermore, we demonstrated that approximately 50% of Swedish slaughterhouses can be shut down with a minimal effect on total transport distances. This implies that in terms of the overall welfare picture, the decision of which animals to send where plays a for more significant role than the number of slaughterhouses. In addition, by changing relative weights on distances in the optimisation function the amount of individualtransports with longjourney times can be decreased. We also show results from altered slaughterhouse capacity and geographical location of slaughterhouses. This is the first time an entire country has been analysed in great detail with respect to the location, capacity and number of slaughterhouses. The focus is mainly on the analysis of unique and detailed information of actual animal transports in Sweden and a demonstration of the potential impact redirection of the transports and/ or altering of slaughterhouses can have on animal welfare.

    • There is a need for reliable and efficient methods for monitoring the activity and social behaviour in cows, in order to optimise management in modern dairy farms. This research presents an embedded system that could track individual cows using Ultra-wideband technology. At the same time, social interactions between individuals around the feeding area were analysed with a computer vision module. Detections of the dairy cows' negative and positive interactions were performed on foreground video stream using a Long-term Recurrent Convolution Networks model. The sensor fusion system was implemented and tested on seven dairy cows during 45 days in an experimental dairy farm. The system performance was evaluated at the feeding area. The real-time locating system based on Ultra-wideband technology reached an accuracy with mean error 0.39 m and standard deviation 0.62 m. The accuracy of detecting the affiliative and agonistic social interactions reached 93.2%. This study demonstrates a potential system for monitoring social interactions between dairy cows.

    • Dryland livestock production systems are changing in many parts of the world, as a result of growing human populations and associated pressure on water and land. Based on a combination of social and natural science methods, we studied a 30-year transformation process from pastoralism to a livestock-based agro-pastoral system in northwestern Kenya, with the overall aim to increase the understanding of the ongoing transition towards intensified agro-pastoralist production systems in dryland East Africa.Key to this transformation was the use of enclosures for land rehabilitation, fodder production, and land and livestock management. Enclosures have more soil carbon and a higher vegetation cover than adjacent areas with open grazing. The level of adoption of enclosures as a management tool has been very high, and their use has enabled agricultural diversification, e.g. increased crop agriculture, poultry production and the inclusion of improved livestock. Following the use of enclosures, livelihoods have become less dependent on livestock migration, are increasingly directed towards agribusinesses and present new opportunities and constraints for women. These livelihood changes are closely associated with, and depend on, an ongoing privatization of land under different tenure regimes.The results indicate that the observed transformation provides opportunities for a pathway towards a sustainable livestock-based agro-pastoral system that could be valid in many dryland areas in East Africa. However, we also show that emergent risks of conflicts and inequalities in relation to land, triggered by the weakening of collective property rights, pose a threat to the sustainability of this pathway.

    • Milk quality and clinical mastitis in dairy cows are monitored by detecting visually abnormal milk. A standardized method to evaluate clots in milk and studies of the incidence and dynamics of clots in milk at the quarter level are lacking. We validated a method to score clot density in quarter milk samples and describe the prevalence and dynamics of the density scores between consecutive samplings and periods in 4 farms with automatic milking systems. Using in-line filters, we collected quarter milk samples at each milking during 3 periods of 30 h each in each farm. Clot density was scored based on coverage of the filter area as 0 (negative), 1 (trace), 2 (mild), 3 (moderate), 4 (heavy), and 5 (very heavy). The score for a specific quarter and milking is referred to as the quarter milking score (QMS). Three assessors independently scored 902 images of filter samples with a Fleiss kappa value of 0.72. In total, 21,202 quarter milk samples from 5,398 milkings of 621 cows were collected. Of the quarter filter samples, 2.4% had visible clots, distributed as mild (1.4%), moderate (0.6%), heavy (0.3%), and very heavy (<0.1%, n = 8). Cases with a cow period sum of QMS ≥ 4, corresponding to 9.4% of all periods, harbored 86% and 94% of all QMS of 2 to 5 and 3 to 5, respectively. Of these cases, cows sampled in all 3 periods and clots in only 1 period had a quarter period sum score ≥ 1 in 1.8 different quarters in average. Corresponding numbers for the cows with clots or traces in 2 or 3 periods were 2.2 and 2.5 different quarters, respectively. A QMS of 2 to 5 in the preceding milking increased the chance of a QMS >1 in the following milking, with an average chance of 38%. The probability of a QMS > 1 increased with increasing previous QMS, a higher sum of QMS during the milking period, longer milking interval, and higher lactation number, but decreased with increasing days in milk. Our study showed that the method of clot-density scoring is feasible to perform and reproducible for investigating the occurrence and dynamics of clots in milk. Elevated clot-density scores clustered within certain cows and cow periods and appeared in new quarters of the cows over time. The low recurrence of QMS of 1 and 2 within quarters indicated that QMS 3 could be a reasonable threshold for detecting quarters with abnormal milk that require further attention.

    • The aim of this study was to develop a new approach for joint genetic evaluation of mastitis and recovery. Two mastitis incidences (0.28 and 0.95) measured via somatic cell count and three between traits genetic correlations (0.0, 0.2, and -0.2) were simulated for daughter group sizes of 60 and 240. A transition model was applied to model transitions between healthy and disease state. The RJMC package in DMU was used to estimate (co)variances. Heritabilities were consistent with the simulated value (0.039) for susceptibility and a bit upward biased for recovery. Estimates of genetic correlations were -0.055, 0.205, and -0.192 for the simulated values of 0.0, 0.2, and -0.2, respectively. For daughter group size of 60, accuracies of sire EBV ranged from 0.56 to 0.69 for mastitis and from 0.26 to 0.48 for recovery. The study demonstrated that both traits can be modeled jointly and simulated correlations could be correctly reproduced.

Med spillningsinventering kan man på ett enkelt sätt skaffa sig en helhetsbild av effekter på både lokal och regional skala för hela populationen. Spillningsinventering har länge använts som metod för att inventera och uppskatta populationsstorlekar hos vilda djur. Under senare delen av 1900??talet har det även börjat användas för att skatta habitatnyttjande eftersom det erbjuder ett billigare alternativ än t.ex. GPS??halsband. I Sverige används spillningsinventering i stor utsträckning för att uppskatta populationsstorleken hos klövvilt som älg och rådjur. Det finns olika metoder för att inventera spillning, i den här rappor??ten kommer vi att beskriva metodik för provyteinventering och för Distance Sampling i linjer och i punkter. Provyteinventering är en typ av stickprovstag?? ning där man inventerar all spillning på förutbestämda provytor. Provytornas placering i terrängen är vanligtvis systematisk slumpvis för att man ska täcka in all typ av terräng i inventeringen. Tätheten av spillning i de olika punk?? terna relateras sedan till olika miljöfaktorer som t.ex. vegetationstyp, topo?? grafi, och avstånd till vägar, vindkraftverk och kraftledningar, och i de fall det finns; täthetskattning av rovdjur. Den andra metoden som vi beskriver är Distance Sampling eller inventering av avstånd då man inventerar längs linjer i terrängen och skattar avstånden från linjen till de spillningshögar som man hittar. Tätheten av spillning längs linjen kan relateras till olika habitatfaktorer på samma sätt som för resultaten från en provyteinventering. På regional nivå kan det gå fortare att inventera med Distance Sampling??metoden men på en lokal nivå är det osäkert om det ger någon tidsvinst. Den här rapporten är i första hand en metodbeskrivning av spillnings?? inventering på ren. Informationen i den här rapporten kan användas som en del för att upprätta ett kontrollprogram där man vill kunna spåra om renarnas habitatval förändras i och med en vindkraftsetablering. Vi beskri?? ver även möjliga felkällor och/eller bias för metoden. Alternativa metoder till spillningsinventering nämns också i denna rapport men beskrivs inte närmare. I slutet av rapporten finns en fördjupad del där vi beskriver hur man statistisk kan analysera spillningsdata från provyteinventering, och mer generellt hur man kan behandla data från Distance??inventering

    • To maintain dairy cattle health and welfare at commensurable levels, analysis of the behaviors occurring between cows should be performed. This type of behavioral analysis is highly dependent on reliable and robust tracking of individuals, for it to be viable and applicable on-site. In this article, we introduce a novel method for continuous tracking and data-marker based identification of individual cows based on convolutional neural networks (CNNs). The methodology for data acquisition and overall implementation of tracking/identification is described. The Region of Interest (ROI) for the recordings was limited to a waiting area with free entrances to four automatic milking stations and a total size of 6 × 18 meters. There were 252 Swedish Holstein cows during the time of study that had access to the waiting area at a conventional dairy barn with varying conditions and illumination. Three Axis M3006-V cameras placed in the ceiling at 3.6 meters height and providing top-down view were used for recordings. The total amount of video data collected was 4 months, containing 500 million frames. To evaluate the system two 1-h recordings were chosen. The exit time and gate-id found by the tracker for each cow were compared with the exit times produced by the gates. In total there were 26 tracks considered, and 23 were correctly tracked. Given those 26 starting points, the tracker was able to maintain the correct position in a total of 101.29 min or 225 s in average per starting point/individual cow. Experiments indicate that a cow could be tracked close to 4 min before failure cases emerge and that cows could be successfully tracked for over 20 min in mildly-crowded ( < 10 cows) scenes. The proposed system is a crucial stepping stone toward a fully automated tool for continuous monitoring of cows and their interactions with other individuals and the farm-building environment.

    • The yeast Pichia anomala has antifungal activities and its potential in biocontrol and biopreservation has previously been demonstrated. To practically use an organism in such applications on a larger scale the microbe has to be formulated and stabilised. In this review we give an overview of our experience of formulating and stabilising P. anomala strain J121 in a wider perspective. The stabilisation techniques we have evaluated were liquid formulations, fluidised bed drying, lyophilisation (freeze-drying) and vacuum drying. With all methods tested it was possible to obtain yeast cells with shelf lives of at least a few months and in all cases the biocontrol activity was retained. Fluidised bed drying was dependent on the addition of cottonseed flour as a carrier during the drying process. In liquid formulations a sugar, preferentially trehalose, was a required additive. These two kinds of microbial stabilisation are easily performed and relatively inexpensive but in order to keep the cells viable the biomaterial has to be stored at cool temperatures. However, there is room for optimization, such as improving the growth conditions, or include preconditioning steps to enable the cells to produce more compatible solutes necessary to survive formulation, desiccation and storage. In contrast, lyophilisation and vacuum drying require a lot of energy and are thus expensive. On the other hand, the dried cells were mostly intact after one year of storage at 30A degrees C. Inevitably, the choice of formulation and stabilisation techniques will be dependent also on the intended use.

  • Molecular Characterization of Methicillin-Resistant Staphylococci from the Dairy Value Chain in Two Indian States

    • Bovine milk and milk products may contain pathogens, antimicrobial resistant bacteria, and antibiotic residues that could harm consumers. We analyzed 282 gram-positive isolates from milk samples from dairy farmers and vendors in Haryana and Assam, India, to assess the prevalence of methicillin-resistant staphylococci using microbiological tests, antibiotic susceptibility testing, and genotyping by PCR. The prevalence of genotypic methicillin resistance in isolates from raw milk samples was 5% [95% confidence interval, CI (3-8)], with 7% [CI (3-10)] in Haryana, in contrast to 2% [CI (0.2-6)] in Assam. The prevalence was the same in isolates from milk samples collected from farmers [5% (n = 6), CI (2-11)] and vendors [5% (n = 7), CI (2-10)]. Methicillin resistance was also observed in 15% of the isolates from pasteurized milk [(n = 3), CI (3-38)]. Two staphylococci harboring a novel mecC gene were identified for the first time in Indian dairy products. The only SCCmec type identified was Type V. The staphylococci with the mecA (n = 11) gene in raw milk were commonly resistant to oxacillin [92%, CI (59-100)] and cefoxitin [74%, CI (39-94)], while the isolates with mecC (n = 2) were resistant to oxacillin (100%) only. All the staphylococci with the mecA (n = 3) gene in pasteurized milk were resistant to both oxacillin and cefoxitin. Our results provided evidence that methicillin-resistant staphylococci occur in dairy products in India with potential public health implications. The state with more intensive dairy systems (Haryana) had higher levels of methicillin-resistant bacteria in milk.

    • Regeringen fattade den 26 juni 2008 beslut om ändring av Jordbruksverkets regleringsbrev rörande uppdraget ”Åtgärdsprogram för minskade växtnäringsförluster” vilket ersätts av uppdraget; ”Jordbruksverket ska efter samråd med berörda myndigheter och organisationer lämna förslag till ett handlingsprogram för minskade växtnärings- och växthusgasförluster från jordbruket för perioden 2011 till och med 2016 med utblick till 2020.” Framtagandet av ett handlingsprogram inom jordbruksverket bedrivs som ett projekt vilket ska utgöra underlag för vidare beslut och genomförande. Föreslagna åtgärder och styrmedel ska vara realistiska, genomförbara och kostnadseffektiva. Förslag till nytt handlingsprogram ska vara färdigt våren 2010. Som ett led i projektet gavs ett uppdrag till Åsa Kasimir Klemedtsson att utreda och ge förslag till möjliga åtgärder i jordbruket som kan minska lustgasavgången från jordbruksmark. Rapporteringen följer de anvisningar som gavs.

  • Variation in carbon footprint of milk due to management differences between Swedish dairy farms

    • To identify mitigation options to reduce greenhouse gas (GHG) emissions from milk production (i.e. the carbon footprint (CF) of milk), this study examined the variation in GHG emissions among dairy farms using data from previous CF studies on Swedish milk. Variations between farms in these production data, which were found to have a strong influence on milk CF, were obtained from existing databases of 1051 dairy farms in Sweden in 2005. Monte Carlo (MC) analysis was used to analyse the impact of variations in seven important parameters on milk CF concerning milk yield (energy-corrected milk (ECM) produced and delivered), feed dry matter intake (DMI), enteric CH4 emissions, N content in feed DMI, N-fertiliser rate and diesel used on farm. The largest between-farm variations among the analysed production data were N-fertiliser rate (kg/ha) and diesel used (l/ha) on farm (CV = 31% to 38%). For the parameters concerning milk yield and feed DMI, the CV was approximately 11% and 8%, respectively. The smallest variation in production data was found for N content in feed DMI. According to the MC analysis, these variations in production data led to a variation in milk CF of between 0.94 and 1.33 kg CO2 equivalents (CO2e)/kg ECM, with an average value of 1.13 kg CO2e/kg ECM. We consider that this variation of ±17%, which was found to be based on the used farm data, would be even greater if all Swedish dairy farms were included, as the sample of farms in this study was not totally unbiased. The variation identified in milk CF indicates that a potential exists to reduce GHG emissions from milk production on both the national and farm levels through changes in management. As milk yield and feed DMI are two of the most influential parameters for milk CF, feed conversion efficiency (i.e. units ECM produced/unit DMI) can be used as a rough key performance indicator for predicting CF reductions. However, it must be borne in mind that feeds have different CF due to where and how they are produced. © 2011 The Animal Consortium.

    • Many traditional pastoralist systems are greatly impacted by cumulative encroachments of other land users and by climate change. Understanding land degradation and the adaptive capacity of people who are dependent on the rangelands is an urgent priority for many areas in the world. In this research we explore how changing environmental conditions affect herding strategies on winter pastures and the role of indigenous and local traditional knowledge (ILK) in Sami reindeer husbandry. Our results indicate that traditional Sami reindeer herding strategies are still practiced, but that rapidly changing environmental circumstances are forcing herders into uncharted territories where these traditional strategies and the transmission of knowledge between generations may be of limited use. For example, rotational grazing is no longer possible as all pastures are being used, and changes in climate result in unpredictable weather patterns unknown to earlier generations.

    • Two methods that can help to reduce the distances involved in transportation of cattle to slaughter are presented, route optimization and spatial redistribution of slaughter capacities. In a comparison ot three route optimization techniques we show that RuttOpt is the most effective and that the number of stops on routes can be reduced compared to what is the case today. We also find that transport distances can be reduced by 40 % compared to the real transports of 2008 if animals are sent to the closest available facilities. We believe that the metods highlighted here can help improve the sustainability and animal health in both organic and conventional farming.
